This is my favorite dish many years ago, but this year I went to a restaurant located in San Antonio de Belen, called Mamma Mia, it was just perfect. <br />Spaghetti alla Checca is very simple to prepare. You need spaghetti, onion, cherry tomatoes, fresh basil leaves, salt, black pepper, olive oil, and fresh mozzarella cheese. As you can see, is very natural dish. Another advantage of this dish is that it’s very quick to prepare.<br />You only have to cook the pasta as you always do. Meanwhile, you have to combine the rest of the ingredients in a food processor except the mozzarella cheese. The tomatoes should have to be coarsely chopped. <br />At the end we only have to toss the pasta with the tomato sauce and the diced mozzarella cheese.<br />I must confess that I like pasta in almost any dish while eating as cooking.<br /> <br />
