16. Christmas Cookie Recipe from Amy
INGREDIENTS
1 stick of butter, melted
1 cup brown sugar – (or ½ cup brown & ½ cut white)
2 eggs
1 tsp vanilla
1 cup of flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt
PROCEDURE
Melt butter and add sugar
Add eggs when butter and sugar mixture is cool enough so it doesn‟t start to cook the eggs.
Add vanilla
Mix the dry ingredients and add to the „wet‟ ingredients.
To this basic recipe various ingredients can be added.
For the Christmas party I doubled this recipe and added about 1 cup of fruit cake mix,
½ cup of glazed cherries halved, ½ cup of glazed pineapple and about ¾ cup of
broken walnuts. Pecans would be great. It could have used more nuts, cherries
and pineapple for my taste.
This could be used for a “blonde” brownie and add butterscotch chips and/or choc.

To make brownies use white sugar and add to the butter. THEN add 1/3 cup cocoa
powder, then eggs and vanilla. I think it makes a difference in the texture when
you add the cocoa after the sugar. Reduce flour to ¾ cup for a more moist and
chewier brownie.

17. WASH DAY PEACH COBBLER
(The one Dutch Dinwiddie does)
In a large bowl combine:
2 cups flour
2 cups sugar
1 tbls baking powder
2 dashes salt
2 tbls cinnamon
Cut up 2 sticks real butter and put into bottom of 9” x 13” baking pan.
Put into a pre-heated 350 oven until it melts.
While butter is melting, stir up dry ingredients and add 2 cups whole
milk
and stir well into a batter.
Remove pan from oven and pour batter over butter but DO NOT STIR!
Open 2 #10 cans of peach slices in heavy syrup. Drain ½ the liquid.
Distribute peaches and juice over batter, DO NOT STIR. Put into 350
oven.
After 30 minutes, pull out and sprinkle top with cinnamon sugar.
Continue baking for 30 more minutes.

There will be a Memorial Service for Ann on Tuesday November 23rd at 10:30 A.M.
at Church of the Holy Trinity, 211 Byrne St. Houston, Texas 77009. There will be a
reception in the Parish Hall following the service
Bill's home address is 14006 Woodthorpe Lane, Houston, Texas 77079.
I have spoken with Bill and he is doing as well as expected. I am getting with Bil
l this evening for dinner. Jim is out of town on a church men's retreat and will not be
back until tomorrow.
