What is Pastry?
• Pastry is a major type of bakers' confectionery. It includes many of the
various kinds of baked products made from ingredients such
as flour, sugar, milk, butter, shortening, baking powder, and eggs.
Small tarts and other sweet baked products are called pastries. Common
pastry dishes include pies, tarts, quiches and pasties.

Muskazine (Austria), Pionono (Spain,Philippines), Puff Pastry
(Europe), Semia (Sweden), Utap/Otap (Philippines),
Yurla (Tibet)
Example of
Special Pastry
and its recipe
Banket
Ingredients:
2cups all-purpose flour 1cup butter, cold
1⁄2cup cold water 1 1⁄2cups almond paste
2eggs 3⁄4cup white sugar
1pinch salt 1⁄4teaspoon almond extract
1egg white, beaten sugar, for top
Procedure:
a. In large bowl, cut cold butter into flour until the mixture has a crumb-like texture. Make a
well in the center, add cold water. Mix together until the mixture forms a ball. Don't overmix!
Chill dough.
b. Preheat oven to 450 degrees. Grease cookie sheets (2).
c. In a medium bowl, blend together almond paste, eggs, sugar, almond extract and salt.
d. Divide dough in 4 parts, and roll into 15" strips. Place filling along the center of each long
strip of dough. Roll up, and pinch the ends to seal.
e. Place strips 2" apart on cookie sheets. Brush with egg white, and sprinkle with sugar.
f. Bake for 15-20 minutes or until golden brown.
g. Cut into slices when cooled a little, and enjoy!
Knafeh
Ingredients:
1lb shredded phyllo dough 2lbs sweet cheese
1 -1 1⁄2cup rendered butter 1⁄2cup sugar
1tablespoon orange blossom water 1⁄4cup pine nuts
1teaspoon knafeh food coloring 1⁄4cup pistachios,
chopped
2cups thin syrup (attar)
Procedure:
• Mix cheese, sugar, and orange blossom water together.
• Chop knafeh dough with a sharp knife. Mix with 1 3/4 cups hot butter over low fire for 15
minutes, or until dough absorbs all the butter.
• Mix 1/4 cup butter, knafeh coloring, and spread in a 17x12 inch pan. Sprinkle pine nuts
evenly.
• Spread 2/3 of the dough in the pan over the nuts and press well. Spread the cheese mixture
over dough evenly. Cover with the rest of the dough and press well.
• Bake at 400 degrees in a preheated oven for 30 minutes. (Place on lower rack).
• Add thin attar. Flip the tray over in another tray of the same size. Return to the oven and
bake for 10 more minutes.
• Garnish with pistachios and serve hot!

  • 7. Ingredients: 2cups all-purpose flour 1cup butter, cold 1⁄2cup cold water 1 1⁄2cups almond paste 2eggs 3⁄4cup white sugar 1pinch salt 1⁄4teaspoon almond extract 1egg white, beaten sugar, for top
  • 8. Procedure: a. In large bowl, cut cold butter into flour until the mixture has a crumb-like texture. Make a well in the center, add cold water. Mix together until the mixture forms a ball. Don't overmix! Chill dough. b. Preheat oven to 450 degrees. Grease cookie sheets (2). c. In a medium bowl, blend together almond paste, eggs, sugar, almond extract and salt. d. Divide dough in 4 parts, and roll into 15" strips. Place filling along the center of each long strip of dough. Roll up, and pinch the ends to seal. e. Place strips 2" apart on cookie sheets. Brush with egg white, and sprinkle with sugar. f. Bake for 15-20 minutes or until golden brown. g. Cut into slices when cooled a little, and enjoy!
  • 10. Ingredients: 1lb shredded phyllo dough 2lbs sweet cheese 1 -1 1⁄2cup rendered butter 1⁄2cup sugar 1tablespoon orange blossom water 1⁄4cup pine nuts 1teaspoon knafeh food coloring 1⁄4cup pistachios, chopped 2cups thin syrup (attar)
  • 11. Procedure: • Mix cheese, sugar, and orange blossom water together. • Chop knafeh dough with a sharp knife. Mix with 1 3/4 cups hot butter over low fire for 15 minutes, or until dough absorbs all the butter. • Mix 1/4 cup butter, knafeh coloring, and spread in a 17x12 inch pan. Sprinkle pine nuts evenly. • Spread 2/3 of the dough in the pan over the nuts and press well. Spread the cheese mixture over dough evenly. Cover with the rest of the dough and press well. • Bake at 400 degrees in a preheated oven for 30 minutes. (Place on lower rack). • Add thin attar. Flip the tray over in another tray of the same size. Return to the oven and bake for 10 more minutes. • Garnish with pistachios and serve hot!
