Food is viewed differently today than ever before. New food items inhabit the marketplace; foods with different, foreign and exotic names like hummus, kumbacha, tomatillo and miso. There is an enormous acceptance to the new and different. It is within this context that our opportunity exists for the sale of specialty foods. So, what makes a food specialty?
