3. COD FISH STEW: PORTUGUESE “CALDEIRADA” Ingredients Dried salted cod fish, soaked Potatoes Onions Tomatoes Garlic Green/Red peppers Olive oil: as much as needed White wine: a glass (+/- 2 dl) Water: ½ a glass (+/- 1 dl) Parsley Bay leaves Pepper: grated, to taste Salt: to taste
4. COD FISH STEW: PORTUGUESE “CALDEIRADA” Preparation In a pan place a layer of onion rings, another of potatoes, another of green/red peppers, another of tomatoes, garlic, parsley, all ingredients cut into slices, layer by layer, on the last layer place the soaked cod fish.
5. COD FISH STEW: PORTUGUESE “CALDEIRADA” Preparation Drizzle with olive oil to taste, white wine and water, and season with salt and grated pepper, place the lid on the pan and let it boil. When it boils, lower the heat and let it cook for 35 to 40 minutes.
