ingredientsFresh Pasta• 200g flour• 2x eggs• 1x egg yolkSeafood Sauce• 500gm prawns• 8x oysters in the shells• 125g scallops• 60g butter• 2x cloves garlic, crushed• ½ cup dry white wine• 300ml cream• ¼ cup water• 1tbsp cornflour• 1tsp lemon juice• Salt and pepper• 1tbsp chopped parsley• 3x shallots
method1. Pour the flour out onto a clean working surface and make a small well in the middle.2. Add to the well the eggs and egg yolk and mix/knead together until you have a smooth and shiny texture.3. Set your pasta dough aside for 20 minutes.
method4. Once your dough has rested, you can start rolling it out. Cut the dough into small segments and pat out into a flat round shape.5. Roll the pasta through the pasta maker on the highest setting, and continue to do so decreasing settings to create your desired style of pasta.
method6. To create the seafood sauce - melt the butter in a heavy pan and cook the crushed garlic for a few minutes.7. Add the wine and cream to the pan and bring to the boil.8. Combine the cornflour and water and allow the sauce to thicken.9. Add the lemon juice and season with salt and pepper.
method10. Add the prepared seafood (except oysters) and cook for 2 minutes.11. Stir in parsley and chopped shallots.12. Pour over pasta and garnish with oysters in their shells.
