Fried basmati rice with vegetables

Time: 5 Minutes Cooking time : 7 minutesIngredients:5 Cup Zafarani Basmati Rice (cooked & cold)3 Tablespoon Oil, divided2 Large Eggs ,beaten3 Tablespoons Kikkoman Soy Sauce1 Medium Spring onion, thinly sliced1 teaspoon Fresh ginger, finely chopped1 cup Peas, frozen1 Large Carrot, peeled, finely cubedSpring onionDirections:Heat half the oil in a wok or large frying pan. Pour inthe eggs and soy sauce and cook stirring constantlyuntil eggs are the size of peas. Remove and set aside.Heat the remaining oil, stir fry the onion and gingeruntil transparent.Add the peas and carrot, cook for 2 – 3 minutes. Addrice and cooked eggs. Stir-fry on high heat 3 - 4minutesuntil very hot.Spoon into serving dishes, sprinkle with spring onion.Serving : 4-6FRIED BASMATI RICE WITH VEGETABLES
