Kate Piersons Cosmic Carrot CakeFor dessert, why not sample Kate Piersons, (founding member of The B-52s), delicious Cosmic Carrot Cake!This recipe, once again, comes to us from "PETAs Celebrity Cookbook."INGREDIENTSFor the cake:2 cups grated carrots1½ cups raisins2 cups water½ cup vegetable oil1¼ cups maple syrup1½ tsp. ground cinnamon1½ tsp. allspice½ tsp. ground cloves1 ½ tsp. salt3 cups whole wheat flour1½ tsp. baking powder¾ cup chopped walnutsFor the frosting:4 cups powdered sugar2 (8-oz.) containers plain non-dairy cream cheese, room temperature½ cup unsalted margarine, room temperature4 tsp. vanilla extractPreheat the oven to 300 degrees F. Grease a 10-inch cake pan. Cook the carrots and raisins in the water overmedium heat in a big pot, until the raisins are soft, about 7 to 10 minutes, then remove from heat. Add the oil,maple syrup, cinnamon, allspice, cloves and salt; stir and let cool.In a large bowl, combine flour, baking powder, and walnuts. Add the carrot mixture and stir until combined. Pourthe batter into the cake pan and bake for 45 minutes to 1 hour. The cake is done when a knife inserted in thecenter comes out clean.In a medium bowl, use an electric mixer to beat all the ingredients for the frosting until smooth and creamy.Spread on cake.
