The cultivation takesplace at an altitude of 860m, in the protected area of the Prespa NationalPark and in small family farms. The farmers still preserve the traditionalfarming methods. The soil is light, warm and fertile, rich in organic matterthat drains well. The pH is close to the optimum for growing, that is pH =5,8-6.Characteristics : The Gigantes Elephantes Beans from Prespes is a Greekvariety of high quality, thin-skinned and very easy to prepare (shortboiling time), that has been cultivated in this area since the 16th century.This variety is distinguished by the large size of beans, their reniformshape and white colour.Tasting notes: They are soft and smooth. The area offers a perfectecosystem with top quality soil and excellent climatic conditions forgrowing beans at an altitude of 650m to 700m. The soil is considered to beideal with balanced pH and good drainage of the terrain. Farmers intheir small farms, follow traditional cultivation methods with lot ofmanual work during the whole process of growing.Characteristics: The Gigantes Elephantes Beans from Kastoria is a Greekvariety of high quality, thin-skinned and very easy to prepare (shortboiling time), thanks to the unique combination of microclimate, soilcomposition and traditional farming techniques used. It is distinguished bythe relatively large size of beans (slighltly smaller than the Giant beansfrom Prespes), their reniform shape and white colour.Tasting notes: They are soft and smooth. The cultivation takesplace at an altitude of 860m, in the protected area of the Prespa NationalPark and in small family frams. The soil is light, warm and fertile, rich inorganic matter that drains well. The pH is close to the optimum for growing,that is pH = 5,8-6.Characteristics: Plake beans from Prespes is a Greek variety of high qualitythat has been cultivated here since the 16th century. This variety isdistinguished by the large size of beans, their reniform shape and whitecolour. Thanks to othe unique combination of the microclimate, the soilcomposition and the traditional farming techniques used, they are thin-skinned and boil easily.Taste: They are delicious and tender with rich taste and aroma. The climate is influenced by its geographicalposition and altitude, in combination with the great mountains and lake.It is purely continental, with cold winters, high precipitation and snow.The average annual temperature of 11,5 °C positively affects themicroclimate of the neighbouring areas, providing milder conditionsduring the winter. The mild local climate, fertile soils of the drainedpart of the lake and the small family farming favour the cultivation ofour medium beans, giving them their distinctive quality.Characteristics: The Medium Beans have small oval shape and white color.The well adapted variety to the microclimate conditions of the area makethis bean delicious, soft and highly nutritional.Tasting notes: Buttery texture and rich aroma, thin-skinned, easy toprepare. The pH is close to theoptimum for growing, that is pH = 5,8-6.Characteristics: The Coloured Giant Beans from West Maceonia is a localvariety with unique characteristics, distinguished by the large size ofbeans and their purple-black colour. Our fields are mostly located in hilly and mountainousareas, away from the lake, at altitudes between 620m and 1200m, with nohumidity. The climate offers mild winters with low temperatures, mild tomoderate rains in the spring and gradually dry summers with increasingtemperatures and intense sunlight. The land consists of limestone, withexcellent pH values from 6.5 to 7.Charateristics: The Small Lentils from Kastorias is a purely Greek varietycalled Samos, that has adapted perfectly to the climate and soil conditionsof the mountain slopes. Our lentils have small size and light green colour.Tasting notes: Their full taste and rich “mediterranean” aroma reflect thepurity of the enviroment they grow. Greek Small Chickpeas from Grevenaa)Organic Farmingb)Conventional cultivation: Certified under the Integrated Management CropsystemCultivation area: Grevena Mountains, Grevena Prefecture, North-West GreeceCultivation: The region of Grevena is entirely mountainous with lush forestsand biodiversity. The cultivation of chickpeas in Grevena takes place sincethe 18th century. Our farmers cultivate their Chickpeas in the highlands ofthe county at an altitude of 650m and higher. The relatively warm and semi-dry climate of the region with little rainfall, the suitable soil type, thewell-drained fields with pH 6-8 and low calcium and magnesium favor theproduction of quality chickpeas and add excellent features, such asdelicious taste, color and think skin.Characteristics: Our chickpeas have small size and yellow/brown colour. Theyhave very thin skin so there is no need for peeling it during itspreperation process.
