Pierna de Pavo deshuesada y troceada 2) Se pesan el alginato WBS 203 y el colágeno y se hidratan con su respectivo % de agua por separado 3) Se incorpora primero la colágeno prehidratado a la carne magra y se mezcla durante 5 min. Después se agrega el alginato y se mezcla por 5 min más. 4) Se embute y deja reposar durante 8 hrs (- 2°C a 5°C) 5) Rebanar
