Cupcakes

For the cupcakes: For the strawberry frosting1 cup granulatedsugar 1 stick of butter,1 stick butter (113 g) softened2 eggs 3 cups powdered2 tsp vanilla extract sugar2 tsp baking powder 1/2 cup strawberry1/8 tsp salt preserves1 and 1/3 cups flour 1/2 tsp. vanilla extract1/3 cup whole milk Fresh strawberries, for garnishing A pinch of salt

Preheat your oven to 180 ºCIn a bowl CREAM the butter and the sugar.Add the eggs and the vanilla extract and BEAT.ADD the dry ingredients and slowly add the milk and just mix everything to combine.DO NOT OVERMIX.SCOOP the batter into cupcake papers and make sure its only filled ¾ of the way up because they will rise.BAKE for 20 minutes and let cool for about 45 minutes before frosting.

For the buttercreamFor the cupcakes: frosting:1/2 cup butter 1 stick of butter, softened3/4 cup granulated sugar1/4 cup brown sugar 3 cups powdered sugar1 egg 3 to 5 tbsp. milk1/2 cup cocoa powder1 cup flour 1 tsp. vanilla extract1/4 tsp salt1 tsp vanilla extract½ tsp instant espressopowder1/2 tsp baking powder1/2 tsp baking soda3/4 cup buttermilk
  4. 4. Preheat your oven to 180 ºCIn a bowl MIX the cocoa, baking powder, baking soda and salt. Set asideIn a bowl mix the butter and the sugar Add the eggs and the vanilla extract and BEAT.ADD the dry ingredients and slowly add the milk and just mix everything to combine.DO NOT OVERMIX.SCOOP the batter into cupcake papers and make sure its only filled ¾ of the way up because they will rise.BAKE for 20 minutes and let cool for about 45 minutes before frosting.
