  • Ingredients 1. 5 medium-large corn on the cob 2. 3 red bell peppers 3. 3 scallions, sliced thin 4. 1 bunch fresh basil, chopped 5. 2 garlic cloves, minced 6. 3T fresh lemon juice 7. 1/3c grape seed oil 8. salt and pepper to taste Grilled Corn Salad with Roasted Red Pepper Recipe Personal Chef Service Trivet LA - www.trivetla.com 310.699.8548
  • Directions 1. Heat grill pan. 2. Grill corn for about 15-20 minutes, until you see nice char marks. 3. Roast the peppers on top of a gas burner on the stove. Roast all sides until very black. 4. Place peppers in a covered bowl or sealed plastic bag for 15-20 minutes to let them “sweat”. Set aside.   • Directions cont. 5. Combine the scallions, basil, garlic, lemon and oil in a small bowl and whisk until blended. 6. Season with salt and pepper. 7. Pour over veggies and toss well. Top with fresh basil leaves for garnish. 8. Stand corn upright and shave off the kernels. 9. Place in a serving bowl.
