Ingredients: leftover steak, low-fat refried beans, vegetable oil, cumin, tortillas, cheese, lettuce, green onions, grape tomatoes, lime, sour cream. I can't be bothered with quantities and measurements... do what feels right.
Chop steak. Heat pan over high for about four minutes, then add a small amount of oil and meat. Once meat is browned, stir in refried beans and add a bit of cumin. Meanwhile, char tortillas over stove flame (you electric range-users will have to figure out something like a fireplace).
To assemble, lay tortilla on plate, then layer cheese, meat and bean mixture, lettuce, green onions, and tomatoes. Add a squeeze of lime and sour cream if desired.
For best results, serve with a Stewart's Key Lime soda or Goose Island Grape pop. less
