    • HACCP is a system that helps a food business to asses howthey handle food and implement procedures to ensure thefood they produce is safe.
    • What Is HACCP?HACCP stands for Hazard Analysis and Critical Control Points.HACCP is an industry-wide effort approved by the scientificcommunity as well as regulatory and industry practitioners. This effort is designed to focus specifically on food safety, including food safety in retail establishments.
    • This training manual has been designed to provide a simpleand logical approach for introducing a HACCP-based food-safety training program for employees of retailestablishments. The manual provides the necessaryinformation and references for developing a HACCP plan.Such a plan is intended to produce a system having a step-by-step analysis and resulting in procedures to be followed, including the much-needed documentation of thoseprocedures.
    • There is a legal requirement for food operators to ensurethat their food management system is based on theprinciples of HACCP. This means that Food Operators requirea documented system which will identify what may gowrong and ensuring it doesn’t.
    • A HACCP system allows you to identify hazards and put inplace controls to manage these throughout your supplychain and during production. It can also be used to supportthe requirements of management standard requirements, such as ISO 22000, BRC or SALSA.
    • Strawberry Standards can help your site prepare a HACCPPlan which contains clear and practical procedures with easyto use form that will demonstrate that you are complyingwith the law.
    • Ingredients & Raw MaterialsSpecific legal standards exist to control the composition of foods and theiringredients. Therefore using the right ingredients to produce a quality and legalproduct is crucial. We can assist with ingredient identification, ingredient application, ingredientreplacement and extending ingredient functionality and performance within aproduct.
    • Shelf LifeAny product that can support the growth of pathogenic microorganisms must beassigned a ‘use-by’ date, after which the product must not be sold, and should not beconsumed. We work closely with our approved laboratory to undertake a wide range of testscovering pathogens, spoilage organisms and indicator organisms which is vital to any foodmanufacturing control strategy.
    • Quality ManagementManufacturers must establish and follow quality systems to help ensure that their productsconsistently meet applicable requirements and specification’s.Potential customers may also insist that you have a documented quality system that ensuresfood safety. Alternatively, you may be working towards recognised standards such as BRC orSALSA.We provide independent expertise to implement or enhance your current quality systemsreducing the level of risk, opening market opportunities and increasing credibility whilemaintaining pace with changing customer and industry demands
    • Laboratory Testing & AnalysisAnalysis of food and drink is a very important part of product development and qualityassurance. Food analysis is required for a wide variety of reasons, from testing suitability forpurpose, checking shelf life or authenticity, to assuring legal compliance. We advise on the correct analytical tools and work with UKAS accredited laboratories inorder to get meaningful results.
    • Food LabellingAs product development cycles get shorter, there is an increasing need for a timely, accurate, authoritative and interpretative service, to help ensure that product labels not only meetlegal requirements, but also take full account of the considerable array of formal andinformal guidance which covers many aspects of food labelling and presentation.Label review benefits:• Accelerate your speed to market• Avoid costly product/process reformulations• Minimise critical path delays• Promote supply chain confidence• Avoid label and product write-off costs• Enhance your due diligence capabilities• Build your reputation with enforcement officers• Stay out of court• Future proof your labels
    • Health Claims & Nutrition InformationThe Health Claims Regulations authorise the use of 222 health claims on food products.Food companies may only make these claims if they comply with the strict requirementsrelating to the levels of such nutrients in a product.Only permitted health claims featuring on the list can be used on food packaging across theEU. The list of permitted claims is aimed at protecting consumers against misleading claimsand will ensure a level playing field for food companies. In addition, the new Food Information Regulations will make Nutrition Informationmandatory on the back of pre-packed foods from December 2016. This, is further enhancedby the governments voluntary ‘traffic light’ labelling system which labels the least healthyfoods red and the most healthy in green.
