Blend half this mixture, thespinach and tomato in a mixer to a fine pureeand keep aside. Add the spinach puree, paneer,garam masala, cream and salt into the casseroleagain and mix well. Microwave on HIGH for 3minutes.

Peel the carrots carefully. Cut all the vegetable- greenand red pepper, carrot, mushrooms and green beans into smallsquares Peel the onion and cut it into small pieces. Take a saucepanand heat some oil in it, till it is ho...t. Add green and redpepper, carrot, mushrooms, green beans, peas and onion into thesaucepan. Fry for 3-4 minutes. Add rice and fry foe a minute.Take a stock cube, crumble it and boil in about 500 ml of boilingwater. Keep stirring until the cube is completely dissolved. Thevegetable stock is ready. Add stock and the turmeric to the ricemixture - and bring to the boil. Put a lid on the saucepan andsimmer on a low heat for 10 minutes. Take the lid off and simmerfor a further 5 minutes - until all the water is absorbed. Serve thedelicious golden vegetable rice hot.
