The soda bread is coined as the product of a poor country. It is made with only flour,
baking soda, soured milk and salt.

powder became a
household staple.
With baking soda and baking powder
came soda bread and experimental and
crafty housewives trying to make the most
of their fruit.

6. Pillsbury came out with the
Balanced Recipes cookbook
that included one of the
first banana bread recipes.

These days, you can find all types of banana bread recipes - with walnuts, chocolate
chips, cream cheese frosting. It’s all much more decadent.

9. St. Croix Banana Bread
½ cup of butter
¾ cup of dark brown sugar
1 large egg
1 cup of whole wheat flour
½ cup of all purpose flour
1 teaspoon of baking soda
¾ teaspoon of salt
1 ½ cups of mashed bananas (2 or 3)
¼ cup of vanilla yogurt
1. Cream butter and sugar.
2. Beat in the egg and vanilla yogurt.
3. Add dry ingredients and mix to blend.
4. Add bananas and blend slightly.
5. Bake at 350° in an oiled bread pan for 40-50 minutes.
6. Cool for 10 minutes, remove from pan and cool on a rack.
