North America dominates the sugar substitute market driven by downstream industries like food, beverages and pharmaceuticals. The HIS market by volume recorded a CAGR of approximately 3.13% over the period 2000 to 2011. Sucralose is the largest consumed HIS followed by aspartame, saccharine, cyclamate, natural HIS (stevia), Ace-K and Neotame.
