2. Painting on Royal Icing is very much like watercolor,
but also like porcelain painting.
Mix water with concentrated
food coloring gel and paint.
Highlights can be wiped out
and color can be layered.

3. CREATE THE CANVAS.
Royal Icing is a mixture of egg
whites and water, beaten for
several minutes to a paste
consistency.
Meringue powder is a
convenient alternative to raw
egg whites.
The paste is thinned down to the
point where indentations
disappear after 15 seconds.
This icing is then colored and
dispensed onto the cookie.

4. PAINTING
The icing takes several
hours to dry before
painting can begin.
The gel paint can be
applied in washes or
heavier concentrations.
The process is exactly
like watercolor or acrylic
painting.
