  2. Ginger Chicken Lettuce WrapsIngredients Preparation1 lb. chicken breast, 1/2 cup of crimini 1. Heat a large, nonstick skillet over medium high heat.cut into small cubes* mushrooms, chopped Add the oil once the pan is hot.1 tbsp. sesame oil 4 scallions, chopped 2. Add the chicken and season with salt and pepper.salt and black pepper 1/2 a can of diced 3. Stir fry for 2-3 minutes, until the meat is seared. Then water chestnuts add the garlic, ginger, peppers, cashews, and2 tbsp. minced ginger 1/2 lime mushrooms. Cook for 3 minutes more.2 large garlic cloves, 4. Add three scallions and water chestnuts; stir fry for one 3 tbsp. soy saucechopped minute. Then, add the honey and soy sauce. Cook for1/2 cup red, orange, or one more minute.yellow pepper, chopped 2 tbsp. honey 5. Remove the pan from the heat. Garnish chicken with1/4 cup of cashews, 1 head of Bibb lettuce, one more scallion and lime juice.chopped washed 6. Serve with two Bibb lettuce leaves.* You may substitute pork, tofu, or shrimp.
