History of Sushi <ul><li>Sushi was created to preserve fish </li></ul><ul><li>1000 years ago people had to let the sushi rice ferment for a year before they could eat it </li></ul><ul><li>1600’s- fermentation shortened to one month </li></ul><ul><li>Japanese discovered that vinegar and sugar shortened fermentation so that it could be eaten in days </li></ul><ul><li>1800’s hand squeezed (nigiri) sushi- sushi could be eaten right away </li></ul>

History of Sushi Restaurants <ul><li>1855- First sushi restaurant in America opens but not popular </li></ul><ul><li>1940- more immigrant Japanese so sushi flourished but after Pearl Harbor sushi declines </li></ul><ul><li>1970’s- Sushi surged due to the demand of more exotic food </li></ul>
