  • 2. WELCOMEToday: home brewing,coffee knowledge andpastries.
  • 3. INTRODUCTION TO COFFEEBREWING• Equipment: freshly roasted coffee, scales, grinder, pure water,kettle, Chemex and paper filter.• Important points: grind fresh, main principle of extraction,recipe, flavours
  • 4. CHEMEX RECIPE• 35g of high quality, light roast coffee• Grind coffee to a sand-like coarseness.• Boil the kettle, let it rest for about a minute.• Wet the filter• Wet all the ground coffee with about 100g water• Let the coffee bloom, release gas for 40 seconds• Pour the rest of the water, to 520g, in under a minute.Totalpour time should be around 1mn 30.
