Shanghai Salad <ul><li>Ingredients </li></ul><ul><li>400 g cooked shrimp </li></ul><ul><li>1 small head lettuce, shredded </li></ul><ul><li>200 g bean sprouts </li></ul><ul><li>1 cup carrots, shredded </li></ul><ul><li>3 stalks celery, thinly sliced </li></ul><ul><li>1 onion, chopped </li></ul><ul><li>Dressing: </li></ul><ul><li>1 tbsp ginger, minced </li></ul><ul><li>½ cup vegetable oil </li></ul><ul><li>¼ cup lemon juice </li></ul><ul><li>2 tbsp soy sauce </li></ul><ul><li>2 tsp honey </li></ul><ul><li>How to do </li></ul><ul><li>Blend minced ginger, oil, lemon juice, soy sauce and honey in small bowl to make dressing </li></ul><ul><li>Mix all other ingredients in medium bowl </li></ul><ul><li>Pour dressing on the mixture </li></ul><ul><li>* Serves 8 </li></ul>

Layers of dip <ul><li>Ingredients </li></ul><ul><li>1 can refried beans </li></ul><ul><li>1 jar of salsa </li></ul><ul><li>200 g sour cream </li></ul><ul><li>1 avocado, mashed </li></ul><ul><li>1 cup grated cheddar cheese </li></ul><ul><li>1 onion, finely chopped </li></ul><ul><li>Turmeric or chili powder </li></ul><ul><li>How to do </li></ul><ul><li>Layer ingredients in a glass dish in the order listed </li></ul><ul><li>Sprinkle turmeric or chili powder on the top </li></ul><ul><li>Dip with tortilla chips </li></ul>

Taco soup <ul><li>Ingredients </li></ul><ul><li>200 g ground beef </li></ul><ul><li>½ onion, chopped </li></ul><ul><li>1 package of dry taco seasoning mix </li></ul><ul><li>3 cups water </li></ul><ul><li>2 cans stewed tomatoes </li></ul><ul><li>2 cans pinto beans, drained </li></ul><ul><li>2 cans tomato sauce </li></ul><ul><li>Cheddar cheese </li></ul><ul><li>Green onions </li></ul><ul><li>How to do </li></ul><ul><li>Fry ground beef with onion. Drain fat. </li></ul><ul><li>Add seasoning, water, tomatoes, beans and tomato sauce. Let simmer on low heat for 30 minutes. </li></ul><ul><li>Serve in bowls with grated cheddar cheese and chopped green onions. </li></ul>
