  • Paul DiMattina Serving Large Numbers with Style and Profit DiMattina Restaurant Group Paul Dimattina: Paul will have a lot to share about the success of the well-known restaurants he manages as Operations Manger of the DiMattina Group. The group boasts such restaurants as The Blue Train Café in Southgate, Dimattina’s and Ill Gamero in Lygon St, Society in Bourke Street and Mario’s and Alto in the Gold Coast. Paul was formerly an AFL footballer and managed a restaurant of 60 staff at the age of 18. Originating from humble migrant origins, his family has grown to a thriving dynasty of fruit and vegetables, coffee and restaurants.
