Pumpkin Roll is one my favorite fall desserts. The reason why I like Pumpkin Roll is the cream cheese filling and the moistness of the bread. Also, the recipe is easy. It’s a great Thanksgiving and Christmas dessert.
3 eggs, beaten
1 cup white sugar
½ teaspoon ground cinnamon
2/3 all-purpose flour or self rising flour.
1 teaspoon of baking soda( if using all-purpose flour)
2 tablespoons of butter, softened
8 ounces of cream cheese
1 cup confectioners’ sugar
¼ teaspoon vanilla extract
Preheat oven 375 degrees.
Butter or grease 10x15 inch cookie or jelly roll pan ( Pam cooking spray also can be used.)
Mix eggs(beaten), confectioners’ sugar, ground cinnamon, and pumpkin puree, and flour.
* If using all-purpose flour, in a separate bowl mix flour and baking-soda. Then mix ingredients from other bowl together.
Evenly spread mixture in cookie/jelly roll pan.
Bake for 15 to 25 minutes
Smelling good right now!!
Remove pan from oven and allow to cool for at least 5 to 7 minutes.
Remove cake from pan and place on towel.
Roll cake by rolling towel inside and place seam side down to cool.
Prepare frosting by mixing together the butter, cream cheese, confectioner’s sugar and vanilla.
When cake is completely cooled. Unroll cake and spread w/ cream cheese filling.
Roll up again without towel. Wrap with plastic wrap and refrigerate pumpkin roll until ready to serve.
Optional- Sprinkle confectioners’ sugar on top, when ready to serve.
Yummm, I bet that is tasty! Pumpkin Roll is one of my favorite dishes because it is easy to make. You can make this dessert anytime. I especially like this dessert for Thanksgiving or I make this for office parties or get-togethers. Lastly, if you like walnuts and pecans,they can be added to the recipe.
