      • Sirloin steak would be better fried than cooked in the oven.
      • Put a pan on a high heat with a little oil and let it get really hot before you put the steak in. If you like your steak pink in the middle start with 2-5 minutes on each side - you can cook it a little more if you prefer. You'll get the best flavor if the outside is well browned.
      • I love steak with pepper sauce. Add about 1 cup of concentrated beef stock to the pan around the steak (after the initial cooking time). I like to use 1 stock cube in a cup of hot water. Let it reduce for a couple of minutes. To make it special add a splash of bandy, then tilt the pan and let it burn off. Stand back and be careful of flames! The alcohol is optional - miss it out if you want.
      • Add a spoon of creme fraiche and a few crushed peppercorns, then stir. Taste it and adjust the proportions to your own preference.
