Monday – Chicken Enchiladas'"A spicy chicken and chili pepper mixture is blended with a creamy soup mixture, rolled up in flour tortillas, and baked with Cheddar cheese on top. Recipe 1 Can of chicken soup1 (10.75 ounce) can condensed cream 1/2 cup sour cream 1 tablespoon margarine 1 onion, chopped 1 teaspoon chili powder 2 cups chopped cooked chicken breast 1 (4 ounce) can chopped green chili peppers, drained 8 (8 inch) flour tortillas 1 cup shredded Cheddar cheese Directions: 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a small bowl mix the soup and sour cream; set aside. 3. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and sauté until tender. Stir in the chicken, chili peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through. 4. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese. 5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned

Garlic Chicken Pizza - Recipe Ingredients 1 1/8 cups warm water (110 degrees F/45 degrees C) 1 1/4 teaspoons salt 1 1/2 teaspoons vegetable oil 3 cups bread flour 2 tablespoons dry milk powder 2 teaspoons active dry yeast
2 tablespoons cornmeal 1 cup roasted garlic and parmesan cheese sauce 1/4 teaspoon granulated garlic 10 ounces mozzarella cheese, shredded 2 grilled skinless, boneless chicken breast, diced 1/4 red onion, sliced 1 tomato, cut into thin wedges 1 green bell pepper, seeded and diced Directions Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start. Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pizza pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the diameter of the pizza pan; place on pan. Spread dough with sauce, then sprinkle with garlic. Cover with cheese. On top of the pizza, arrange chicken, green pepper, onion and tomato. Bake in preheated oven for 20 to 25 minutes, or until dough is baked, cheese is melted and toppings are lightly browned.

Chicken Fried Chicken - Recipe Ingredients 30 saltine crackers 2 tablespoons all-purpose flour 2 tablespoons dry potato flakes 1 teaspoon seasoned salt 1/2 teaspoon ground black pepper 1 egg 1/4 cup vegetable oil 6 skinless, boneless chicken breast halves Directions Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well. Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat. One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat. Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.
