  • 1. Meals for a Week<br />My Weekly Dinner Menu – TamishaMunlin<br />
  • 2. Monday – Chicken Enchiladas'"A spicy chicken and chili pepper mixture is blended with a creamy soup mixture, rolled up in flour tortillas, and baked with Cheddar cheese on top. <br />Recipe<br />1 Can of chicken soup1 (10.75 ounce) can condensed cream<br />1/2 cup sour cream<br />1 tablespoon margarine<br />1 onion, chopped<br />1 teaspoon chili powder<br />2 cups chopped cooked chicken breast<br />1 (4 ounce) can chopped green chili<br />peppers, drained<br />8 (8 inch) flour tortillas<br />1 cup shredded Cheddar cheese<br />Directions:<br />1. Preheat oven to 350 degrees F (175 degrees C). 2. In a small bowl mix the soup and sour cream; set aside. 3. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and sauté until tender. Stir in the chicken, chili peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through. 4. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese. 5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned<br />

Garlic Chicken Pizza - Recipe<br />Ingredients<br />1 1/8 cups warm water (110 degrees F/45 degrees C)<br />1 1/4 teaspoons salt<br />1 1/2 teaspoons vegetable oil<br />3 cups bread flour<br />2 tablespoons dry milk powder<br />2 teaspoons active dry yeast<br /> <br />2 tablespoons cornmeal<br />1 cup roasted garlic and parmesan cheese sauce<br />1/4 teaspoon granulated garlic<br />10 ounces mozzarella cheese, shredded<br />2 grilled skinless, boneless chicken breast, diced<br />1/4 red onion, sliced<br />1 tomato, cut into thin wedges<br />1 green bell pepper, seeded and diced<br />Directions<br />Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start. <br />Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pizza pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the diameter of the pizza pan; place on pan. <br />Spread dough with sauce, then sprinkle with garlic. Cover with cheese. On top of the pizza, arrange chicken, green pepper, onion and tomato. <br />Bake in preheated oven for 20 to 25 minutes, or until dough is baked, cheese is melted and toppings are lightly browned. <br />

Chicken Fried Chicken - Recipe<br />Ingredients<br />30 saltine crackers<br />2 tablespoons all-purpose flour<br />2 tablespoons dry potato flakes<br />1 teaspoon seasoned salt<br />1/2 teaspoon ground black pepper<br />1 egg<br />1/4 cup vegetable oil<br />6 skinless, boneless chicken breast halves<br />Directions<br />Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well. <br />Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat. <br />One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat. <br />Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear. <br />
