  • 2. INTRODUCTION This pedagogical project is about the preparation of this typical product known as plantain hamburger. This hamburger has plantain instead of bread, this makes this product original. Tourist and inhabitants visit different places to taste this exotic hamburger, specially a fast food restaurant called Rapicomidas el Negro, which is visited by a lot of clients to eat this kind of hamburger. It is a typical fast food of our state Caquetá, especially of Florencia city. The preparation of this product is easy and fast. It means that anyone can work in these stalls without taking into account the academic formation. For that, reason it contributes to the economicdevelopment of our region as we can see later. This pedagogical project aims at showing the process to prepare plantain hamburger, describing the process to make this burger and learn how this typical food becomes a cultural aspect of the region. Moreover, it describes the type of clients, the function of the workers in detail, the work-schedule, and some aspects form part of the context. The most important part is that people recognize the importance of the gastronomic variety and discover new cultural elements in the Caquetenian food, inviting to everybody to contribute with the development of this region. The history of the hamburger plays an important role in the production of this product because it is the origin of this. It is amazing to see how the plantain hamburger is sold a lot on special dates. a clear sample is in San Pedro Festival, where hundreds of plantain hamburgers are sold. It represents progress to our state and help with employment.
  • 3. DESCRIPTION OF THE SETTING This pedagogical project was conducted in Rapicomidas el Negro fast food restaurant, located in 12th street, N. 6-109 Juan XXIII neighborhood, Florencia-Caquetá. It is a big and luxurious place. This is 5 m wide and 12 m large. In this restaurant, there are twenty tables and 80 chairs of different colors. The cook room is outside the hall. There is a big and sophisticated stove with special grills where the fast food, specially, plantain hamburger is cooked. Carlos Andres Perez is the owner of Rapicomidas el Negro Restaurant. It was founded in September 20th of 1995. It was first located in 11th street, Divino Niño Park. As consequence of the social problem called invasion of public spaces in Florence city, he had to move his restaurant to the place, it is today. It mainly offers plantain hamburgers, hot dogs, stuffed potatoes; French fries, chuzos of meat and soft drinks. This restaurant has eight employees, they have different duties. Some of them cook, other attends clients and the owner is the cashier. They work like a family; their relationship is based on kindness and politeness. They are also hard workers and responsible, they work twelve hours a day from Monday to Sunday. It is the only microenterprise which has its own place. In Florence, there are also many fast food stalls in different places, where you can find plantain hamburger. They are located around Santander Park, on the Fundadores Avenue in Zona Rosa. The clients of Rapicomidas el Negro Restaurant are de different social status. It does not matter if they are rich or poor. The treatment is the same with the clients. Also there are teen clients. It makes a familiar place, where people enjoy eating plantain hamburger with their children, their grandparents and soon. This place is visited by lot families on weekends. They usually eat plantain hamburger with enough pink sauce. Moreover, it is an usual place people visit before dancing and drinking in a discotheque or club. Outside each discotheque is a small fast food restaurant.

OBJECTIVES General Objective To describe the process to prepare plantain hamburger and show the plantain as the main ingredient and measure the impact and it level of consumptions in the typical fast food in Caquetá region. Specific Objectives To recognize the creativity and innovation of Caquetenian in the preparation of plantain hamburger. To evaluate the impact of plantain hamburger in the typical junk food in Caqueta region in aspects gastronomic, cultural and economic. To associate the plantain hamburger with the typical gastronomy of the Caqueta state.
  • 5. HAMBURGER HISTORY According to Wikipedia. History hamburger. 2006, the hamburger is a ground meat patty between two slices of bread; it was first created in America in 1900 by Louis Lassen, owner of Louis' Lunch in NewHaven, Connecticut. There have been rival claims by Charlie Nagreen, Frank and Charles Menches, Oscar Weber Bilby, and Fletcher David. White Castle traces the origin of the hamburger to Hamburg, Germany with its invention by Otto Kuase. However, it gained national recognition at the 1904 St. Louis World's Fair when the New York Tribune namelessly attributed the hamburger as, "the innovation of a food vendor on the pike."] No conclusive claim has ever been made to end the dispute over the inventor of the hamburger with a variety of claims and evidence asserted since its creation. Today, hamburgers are usually a feature of fast food restaurants. The hamburgers served in major fast food establishments are usually mass-produced in factories and frozen for delivery to the site. These hamburgers are thin and of uniform thickness, differing from the traditional American hamburger prepared in homes and conventional restaurants, which is thicker and prepared by hand from ground beef. Generally most American hamburgers are round, but some fast-food chains, such as Wendy's, sell square-cut hamburgers. Hamburgers in fast food restaurants are usually grilled on a flat- top, but some firms, such as Burger King, use a gas flame grilling process. At conventional American restaurants, hamburgers may be ordered "rare", but normally are served medium-well or well-done for food safety reasons. Fast food restaurants do not usually offer this option.In Caqueta State, there is not an exactly date which indicates when the plantain hamburger was first prepared neither who prepared it, but people know it was many years ago.

PLANTAIN HAMBURGUER Ingredients In order to make plantain hamburger, there are some ingredients that it contains. it is necessary one loaf of meat hamburger, two loaves of mature plantain, one slice of mortadella, one green tomato, one white onion, one leave of lettuce, melted cheese, one package of potato chips, ketchup, mayonnaise, pink sauces and a piece of aluminum foil. These ingredients are easy and cheap to buy in any store or supermarket in Florencia. The main ingredient of this product is the plantain because it is consider the best. For that reason, if you are going to make this hamburger, avoid changing this important ingredient which makes difference of others kind of these products. Finally, you have to be sure they are on good state to be eaten. Preparation The preparation of Plantain hamburger is easy and fast. The secret consist on the sequence you put the ingredients on the loaf of plantain. First, put the loaf of meat hamburger and the loaves of plantain on the grill in order to fry. When they are golden, they are ready. Second, chop the green tomato thinly sliced and add salt to taste. Third, chop the white onion thinly sliced and then, add pink and ketchup sauces in order to fry the onion. Finally, put the cheese on the grill, when it is melted remove it. When the previous steps are ready, you just need to assemble it. During the preparation of this product it is important to be careful with the time of cooking of each ingredient because it can get burned. For that reason I recommend to simmer them.
  • 7. How to Assemble the Plantain Hamburger Put a piece of aluminum foil on the table. Then, put upward a loaf of plantain slices of green tomato, two leaves of lettuce, slices of roasted onion. Add ketchup, mayonnaise and pink sauces. Remember that sauces are important in the flavor and the appearance of the product. After that, add potato chips, the loaf of hamburger, a slice of mortadella and cover with the other loaf of mature plantain these ingredients. Finally, wrap the plantain hamburger with a piece of aluminum foil and add melted cheese on it. It is important the napkins when it is served. If you prefer, you can use boxes, especially to hamburgers. After this process, you could enjoy this product at home or in a fast food restaurant.
  • 8. ADVANTAGES AND DISADVANTAGES OF EATING PLANTAIN HAMBURGER The most evident advantage of consuming plantain hamburger is that it saves time. In today's fast-paced life, there is nothing better than getting a ready meal. Besides time, saves cost because to buy a plantain hamburger result cheaper than other kind of food. People can find hamburgers from $ 1.500 to $5.000. Moreover, nowadays, the restaurants which sell them can be found easily. They are really situated in each corner of a street of our city. Another advantage of eating plantain burger is that they have a good taste. And it also, has essential micronutrients in the form of minerals such as calcium, potassium, phosphorus, iron, magnesium and copper. Plantain hamburger also contains small traces of zinc and selenium. Although high in unhealthy fats, nutritional details of hamburger include a small amount of omega 3 acids or healthy fats. However, eating plantain hamburger also has disadvantages because it could cause obesity. Generally, burgers have many calories and these accumulate in the body as fat deposits that can cause obesity. In addition, the burgers contain high amounts of fats and salt that affects the health adversely with other problems like high blood pressure and diseases of the joints. Eating fast food for prolonged periods of time can cause as great harm to your liver as alcohol. The addiction to eat plantain hamburger is really dangerous because people become dependent of it. Then, they will spend a lot of money and theireconomic situationwill be affected. Remember it is better to eat this kind of food on weekends at least.
  • 9. CONCLUSION The plantain hamburger is an important junk food in the Caqueta region. The innovation in its preparation is the main characteristic of this product because the Caquetá plantain is recognized for its quality and provides a different and more delectable flavor. That is why, people prefer to eat plantain hamburger than bread hamburgers. In Florencia city, there are many places where you can find junk food because it is one of the main fast food of all stalls. Whether you are on the road or just cruising around town, plantain hamburgers are at hand anywhere in the city. It is very easy to find people selling that. Moreover, it is necessary that people of others states know, learn and taste plantain hamburger as a typical junk or fast food. Finally, the plantain hamburger has a great impact in the typical junk food in Caqueta State. Many people consume it instead of other food. Even people who are not from Florencia prefer the plantain hamburger. Also, tourists who visit the region enjoy of eating this exotic burger and they wish to return to enjoy again this wonderful food. The innovation of this hamburger shows the creativity of Caquetenian people to make a different product using the plantain which is a typical product in this part of the country. The level of consumption of plantain hamburger is high and it is a good business because many people like buy this kind of food after dance and drink in clubs and discos for that, fat foods stalls are frequently located around these places and the owners of these has good income.
