Coconut Lime Bars: Serves 9 Crust Ingredients: 1 cup flour 1/2 cup butter at room temperature 1/4 cup Blonde Coconut Sugar 1 tablespoon cornstarch Filling Ingredients: 4 eggs 1 cup light agave nectar or light honey 4 limes juiced (about 1/2 cup) 1 tablespoon lime zest 4 tablespoons flour 1/2 teaspoon baking powder Topping: 1 cup flaked coconut Preheat oven to 350 Fahrenheit Combine first four ingredients and spread on bottom of greased 8x8 baking dish. Bake for 10-12 minutes. While crust is baking, whisk all filling ingredients together until thick and lump free. Once crust is baked, remove from oven, pour in filling, sprinkle with coconut, and return to oven. Bake for 20-25 minutes or until just set.
