Ingredients
• 1 cup raw walnuts
• 1 cup raw pumpkin seeds
• ½ cup naturally flavoured plant-based vanilla protein powder
(i.e. hemp, fermented soy) or ground flax seeds
• ½ cup shredded, unsweetened coconut
• ½ tsp. Himalayan salt (Note: Himalayan salt has 84 trace minerals,
same as those found in the human body!)
• ½ cup Tahini
• ¼ cup coconut oil
• 2 tbsp. maple syrup (only if using flax seed powder)
• 2 tsp. vanilla extract (only if using flax seed powder)
• two 100 gram bars of organic dark chocolate (85%)
Instructions
1 Place nuts or seeds, flax meal, coconut, seed or nut butter and salt in the bowl of a
food processor. Process until the nuts or seeds are ground into a coarse meal.
2 Melt coconut oil over low heat. If the temperature of your home is around 76
degrees, you can skip this step and add the oil directly to the food processor as it
will be soft enough to process easily.
3 Add coconut oil (also sweeteners and vanilla, if using flax seed powder) to
processor bowl and process until well combined to form a thick, yet crunchy paste.
4 Press the mixture into an 8×8 square pan (a larger pan will produce thinner bars
while a smaller pan will make them thicker).
5 Place in refrigerator to chill. While bars are chilling, melt chocolate over very low
heat, stirring frequently.
6 Top bars with the melted chocolate and place back in refrigerator to chill. Before
chocolate fully solidifies, cut into squares.
7 Chill in refrigerator until chocolate and bar solidify, and serve. Store in refrigerator.
