• If you want hard chocolate, refrigerate it.
However, if you want it to be softer
chocolate, leave it out.
• It should be safe, since most chocolate
isn't perishable.

• Honestly, don't keep them in the fridge
much longer than overnight or the time
frame you had in mind. The chocolate, in
the fridge, will harden in a matter of
minutes, and even at room temperature.
So, you can dip them a couple hours
before your event. The reason I say not too
much longer than overnight is that
strawberries don't tend to last too long and
they also ooze.
