Summer Berry Cheesecake Brought to you by http://www.easydinnerrecipes.org This is an excellent recipe to try for Memorial Day!Ingredients1 (8 oz.) pkg. cream cheese softened1 1/2 C of milk1 (3 oz.) box of lemon instant pudding and pie filling1 T lemon peel, grated1 (6 oz.) graham cracker pie crust1 pint of fresh blueberries1 pint of fresh raspberries2 fresh whole strawberries
DirectionsMix together with an electric mixer the cream cheese and 1/2 C of milk untilblended. Pour in the remaining milk, the pudding powder and the lemon peeland beat on low speed 2 minutes or just until blended together. Pour themixture into the pie crust and spread out evenly.Cover and chill from 1 to 24 hours. When ready to serve outline the cheesecake with fresh raspberries. Place blueberries along the bottom of the cheesecake right above the raspberries to form a smiling mouth. Cut one strawberryin half and place for the eyes. Place the other strawberry in the middle for thenose. Place the remaining blueberries and raspberries in a bowl and serve as atopping.Makes 8 servingsIf you prefer you can use peeled apple chunks or banana slices for the noseand eyes and strawberries in place of the raspberries.
