  • 3. Ingredients
    • ½ cup diced salt pord
    • 1 small minced onion
    • 1 pint fresh lima beans
    • 3 cups water
    • 2 tablespoons flour

    • 3 cups scalded milk
    • 1 teaspoon finely-chopped parsley
    • Croutons
  • 5. Directions Page 1
    • Put salt pork into sauce pan and cook until crisp.
    • Remove pieces of meat and cook onion in the fat.
  • 6. Directions Page 2
    • Add lima beans and water and cook until beans are tender.
    • Thicken with flour which has been rubbed smooth with just enough water to moisten it.
  • 7. Directions Page 4
    • Cook 3 minutes, add milk and bring to boiling point.
    • Season with salt and paprika and sprinkle parsley over the chowder just before serving.
