  2. 2. Products of terroir, a relevant development model for weakened regions ? <ul><li>We will refer to the experience of Jura mountains (France ) and its typical cheese production </li></ul>
  3. 3. <ul><li>The operations of geographical delimitation reveal the character of territory and facilitate the organic process of actors. </li></ul><ul><li>This valorization of terroir products is close to the principles of territorial intelligence (actors, cooperation, etc.). </li></ul>

  5. 5. 1- Terroir effect at the service of territory <ul><li>The terroir products change relation to land. </li></ul><ul><li>For producers and consumers this products correspond to a comon quest of identity. </li></ul><ul><li>They constitute a way to internalize such phenomena as the landscape amenity into the rural offering of products and services. </li></ul>
  6. 6. <ul><li>The terroir products will allow for the maintenance of landscape ; in turn they will benefit from their positive image. </li></ul><ul><li>(cf Amédée Mollard: la « rente de qualité territoriale »). </li></ul>
  7. 7. <ul><li>In the area of Jura the cheese factories will invite the consumer to the scenery of cheese manufacturing. </li></ul><ul><li>This process is accompained with direct selling, enacting the principle of short commercialization circuit, at the attention of tourists and adjacent urban population. </li></ul>

Limits and ambiguities <ul><li>- The images carried by the terroir products might come in conflict with some unavoidable activities like technology or logistics associated with mass production. </li></ul><ul><li>For example: Beaune logistic center (Burgundy) beside well-known wineries ! </li></ul><ul><li>- In the walk of terroir products we can observe imitations and pretences. </li></ul>
  9. 9. <ul><li>Although the terroir products contributes to the maintenance of landscapes it is not obvious that all elements of emblematic landscape can be preserved. </li></ul><ul><li>For example, in Jura mountains the typical stone walls that are in obsolescence. </li></ul>
  10. 10. 3- Managing the proof of concept <ul><li>Since 1992, the date of institunationalization of the Protected Designation of Origin in Europe, it has been mandatory to prouve the anteriority and the links between the product and its environment (geology, pedology, topography…). </li></ul>
  11. 11. <ul><li>- Would the demonstration of anteriority not be close to the construction of myths ? </li></ul><ul><li>- However, the link to the environment has been clearly established for vegetal productions like wines, the equivalent link for animal productions like dairy is much harder to demonstrate. </li></ul><ul><li>Pionner work in this matter has been done in the case of the cheese of the brand « Comté ». In this sense real vintage cheeses have been developped in this area. </li></ul>
  12. 12. <ul><li>The Comté cheese is produced within the frame of a strong socio-economic community based on the culture of territoriality as a comon value to all actors of the Comté cheese cluster. </li></ul>
  13. 13. In conclusion <ul><li>In a region which was relatively fragile in social and economic respects, the choice for coordinated ad disciplined territorial system of production can be evaluated as a success. </li></ul><ul><li>There fore, he has prouven its ability to maintain for participating actors adequat returns on their investments and efforts. </li></ul><ul><li>The sustainability of a production system could be associated with the integration of the culture and specificities of an environment. </li></ul>
