    • Ads by GoogleThere are literally tens of thousands of different varietiesof rice in the world. However, rice can actually be brokendown into just three different types if you want to keepthings simple. There is long-grain, medium-grain andshort-grain rice. As the classifications suggest, the threedifferent types of rice grains are categorized based upontheir length as compared to their width. A skinny, longtype of rice grain would be a long-grain whereas around-ish grain that’s about as wide as it is long wouldbe a short-grain.Long vs. Medium vs. Short Grain RiceLet’s get to know these three different rice classificationsa little bit better:Long-Grain RiceLong-grain rice is easy to identify because it is thenarrowest or skinniest of the different types of rice thatyou might come across. If a piece of rice is at least fourtimes in length what it is in width then it is considered to
    • be a long grain. Long-grain rice is usually the fluffiesttype of rice. For that reason it is considered the best typeof rice to serve with sauces; it holds the sauce well but italso tastes good plain. A popular example of long-grainrice isBasmati.Short-Grain RiceWhereas long-grain rice is skinny and tall, short-grainrice is short and fat. It often looks round in shapebecause the width is so close in size to the length withthis grain. Short-grain rice generally has a higher level ofstarch content than the other grains do making it a typeof rice that tends to be sticky. For that reason it’sespecially popular for rice pudding although it can beeaten alone or in other rice dishes as well. A popularexample of short-grain rice is Arborio.Medium-Grain RiceOnce you get a good idea of what constitutes long-grainrice and what would be considered short-grain rice, you’llalso be able to identify medium-grain rice. It’s the type ofrice that falls somewhere in between the two othergrains. For example, a rice grain that is about threetimes as long as it is wide would be a medium-grain rice.Medium-grain rice is terrific in rice-based dishes such aspaella and risotto.Grains of Rice: The Exact ScienceAs an individual in your own kitchen, you probably aren’tgoing to need to measure grains of rice exactly to figure
    • out which ones are long, medium and short. First of all, many of the packages of rice that you buy or recipes thatyou work off of will tell you which type of rice the one youneed is. And secondly, you aren’t likely to be that picky. But just in case you are wondering, there is an exactscience to the classification of rice grains.According to the LSUAg Center website, rice grainclassification is based on an exact measurement setforth in the USDA Federal Grain Inspection ServiceGrain Inspection Handbook. The measuring processrequires laying fifteen grains ofrice side by side and thenend to end to measure the ratio of length to width.Theexact measurements that make up each grainclassification vary depending on whether the rice isbrown or white. The Long and Short Of ItAlthough there’s an exact science to the measurement ofrice grains, as a novice cook you really only need toknow the basics. A long skinny type of rice grain will beless sticky and a bit firmer than a short, fat rice grain.
