  5. 5. Arun Chanda - Founder Director Arun Chanda is a Hotel Management graduate from IHMCT&AN Bhubaneswar, 1993 batch. With more than 20 years in the hospitality industry, he has a wealth of top-notch hands-on experience in Culinary & F&B operations and management. Right from the first year of his career, when he was adjudged the “MOST PROMISING & UPCOMING CHEF OF THE YEAR” in 1993 at Hotel Cidade de Goa, a 5 star beach resort in Dona Paula, Goa, he has received many accolades in his two decade long journey in this industry. Numerous awards as a Chef, success as General Manager with leading brands and precious commendations from erstwhile employers like Centaur, Radisson, Park Royal, Oberoi Group, Ambassador’s and Graviss Hospitality in cities like Goa, Mumbai, Kolkata & Delhi/NCR. Arun has always been an initiator of ideas and endeavor. And thus, after 20 fruitful years from his first day in Hospitality, in mid 2009, he founded his own Hospitality Consulting firm - Mint Hotels & Restaurants Consultancy Pvt Ltd, based out of New Delhi, India. Arun specializes in conceptualisation of F&B brands, menu development, food styling, kitchen & bar designs and brand development & operational processes.   6. 6. Satyajit Mukherjee (Satya) – Director Branding & Communication Strategy Satya comes from a strong media background having worked as a TV channel producer with Channel V and Miditech. He is a film-maker by profession and, over the past two decades has many ad films, documentaries, corporate films and AVs to his name. He is also a renowned and leading Voice Artiste, being the voice of international TV channels like Discovery, NGC, The History Channel, CNN-IBN, IBN7, Aaj Tak etc. Having worked a great deal in the advertising space, he has a great eye for detail and helps in concept building in the F&B space. Music and eating good food is his passion and he loves to travel and try cuisines from different corners of the country. He helps in concept feasibility study and his great ideas gives Mint that extra edge in building great concepts. He is a keen student of trend-shifts, and plays a key role in formulating the right brand strategy for different concepts. Satya is also instrumental in creating brand and menu literature.

He has also taken up periodic training assignments for large hotel chains & educational institutions. He has proven track record in selling & marketing big brands. Currently, he is leading the Business Development effort for Mint in South &West India. Vishal Singh – Executive Director Branding & Graphics Vishal has an experience of more than 7 years in brand development & communication. He has created brands such as Aqua (The Park), Agni (The Park), SideWok, Hukkah, Nasha, Cafe Oz & Bar, Ahoy! Asia, Porterhaus & The Funjabi Tadka. He brings in a very vital sense of 'calm' to the team. From naming conventions, brand IDs and graphics, to web apps, websites and social media - he and his team of some of the best designers ensure that your brand looks and speaks the same language that its meant to. Vishal also has an expertise in food photography.

Rajeev Chauhan – Director Logistics Having more than a decade of experience in restaurant & hotel accounting, supply chain management & F&B Controls, Rajeev is a thorough professional in setting up systems & process for any organization working in the F&B space from small QSRs to large format restaurants & banqueting. He is heading Back Office Management for all Mint Consulting Projects. Manish Sansi – Associate Director Franchise Development & Real Estate Solutions Hotel Management Graduate with more than 18 years of rich hands-on franchise & business expansion. Manish helps in sourcing restaurant locations, does feasibility studies, due diligence & also plays a key role in Franchise Development Programs. Manish is looking after brands like Costa Coffee, Baskin Robbins, McDonalds, Pizza Hut, Yogurberry, Dunkin’ Donuts, Sagar Ratna, Coffee World, KFC, Dominos, Nirulas, Porterhaus, Ahoy! Asia to name some. We also have an exclusive, pan India business development tie up with Timex.

He has a rich experience of over 17 years in Hyatt Regency, JW Marriot, Clubs & Bars & can work around different concepts in the bar. He is creative with beverages and he has a in depth knowledge about wines, beers & spirits. He also has a good knowledge on food and can work on wine & food pairing. Its fun to watch him inside the bar. He develops bar concepts, new recipes for Mint & also trains the F&B staff in new projects to align them with his concept & recipes. Deepak Sharma – F&B Manager Deepak has more than 14 years of rich hands-on experience in F&B service. He has worked in fine dining restaurants, cafes & bars in various capacities. He specializes in F&B Training, Bar Designs, Bar Menu Engineering & Execution of new start up projects. He also has a good knowledge of various cuisines and has a good understanding of service styles for different concepts.

He has done his Hotel Management from a premium institute and has worked in many prestigious 5 star hotels like Grand Hyatt, Nikko Metropolitan, Claridges & premium restaurant & café chains in India in all capacities. He is an asset to Mint. He specialises in European, American, Tex Mex & Mediterranean Cuisines. He is meticulous in his work and works with a lot of passion. He develops new menu concepts, does recipe development & training of Chefs & Commis in new concepts & recipes. Ashish Elias – Sous Chef - Cuisine Concepts & Chef Trainer Ashish has done his Hotel Management from Holmes College, James Brook University, Sydney, Australia. After that he did his Advance Diploma in Culinary Arts from Ealing Hammersmith & West London College. He has worked in St. Pancras Renaissance Hotel in the UK, ANZ Stadium in Australia, Hilton & Holiday Inn Hotels in the UK. He has an overall experience of 7 years in the Culinary industry and he develops new culinary concepts in Mint & trains the chefs in our new projects in Kitchen Safety & Hygiene along with recipe training & presentation techniques.

Vikash Mishra – Chef de Partie Food Trials & Menu Engineering Hotel Management Graduate with more than 6 years of hands-on experience in multi-cuisine restaurants & specializes in Continental Cuisine. During that time he has worked with their R&D team to develop new flavours for pastas, noodles & soups, created recipe books for Regional Indian dishes with the application of their product “Bhuna Masala”. Later he also worked on ready Indian Gravies recipes for retail & commercial market. Currently Mint has been appointed by Jubilant Group who owns the franchise of Dominos Pizza & Dunkin Doughnuts in India. We are doing a research on a new product line for the same group.

My recent love for bikes resulted in my buying a Royal Enfield Thunder Bird, the Indian cruiser which has its cult following. However, food is something nobody can take out of my life as it’s my first love. So to find a place where the three of us can spend some time together is always high on my agenda. Out of the very few available options, the newly opened Café Torque in Vasant Vihar, PVR Priya complex, seemed to be THE PERFECT PLACE: a café dedicated to bikers with some really hardcore carnivorous dishes to offer. The moment I stepped in I was impressed to see the interiors done up with bike accessories and spare parts. Worth a notice was the world map made out of motorbike chains and nuts. Even the washroom has a sink laid on top of a tyre, and instead of a tap, a petrol dispenser has been used, which you’d have to admit is really cool. Café Torque has been established by Chef Arun Chanda and the creative think tank Satya. I was hungry and couldn’t resist ordering something to nibble on. The chilli cheese poppers and chipotle chicken poppers arrived first. The latter was good as the chicken was tender and really blended well with chipotle, giving it a distinct taste. The prawn stars were cooked to perfection, while the kicker fish skewers rubbed with peri peri really kicked my taste buds. Another starter worth every bite was the twisted lamb kabab, where the lamb chunks were grilled and topped with some mushrooms. I skipped the pizza, pasta and risotto offerings to have a meaty bite of the burgers available. The lamb burger was good enough to satisfy my hunger. The eight-ounce patty was juicy and done to perfection, while the tenderloin version disappointed me a bit as the meat was undercooked, making it it chewy. For the super bikers who want to hit the road and go on a long journey, steak Diane is the perfect option. Chef Arun just nailed it with the steak. Tuxedo cake with a layer of white and dark chocolate was just the thing for a sweet send-off. Café Torque has been designed to encapsulate the nostalgia of riders by including various elements along the lines of grungy garage interiors, with super-bikes for sale on display, a World map made of nuts & bolts adorning a prominent wall, bannisters propped with chains, guitars made of heavy metal etc. A hot spot for the young generation and a favourite place for fun without spending too much ‘moolah’, the décor suggests just chill out. TIPPLE AND THE FOOD The bartender is every ready to whip up mocktails or pour you a glass of whatever you fancy (liquor license is awaited). An inventive beverage list means you won’t be let down. I loved my ‘Go Green’ a refreshing mix of Cucumber, Green Apple, Parsley and lime as well as the 'Paan Asian Mojito'. For starters along with your tipple. I would recommend quirky, satisfying snacks to nibble which includes ‘Jerk spiced chicken wings’, ‘Peri Peri fish skewers, ‘Turkish Roast chicken’ , ‘or a ‘Mezze platter’ which is an assortment of goodies for the vegetarians. For those in the mood for something more substantial I would suggest the ‘4 Stroke Mezze’ is the sort of monster dish that’s good enough for two. There are even pastas, sandwiches and Burgers on the menu. When all’s done and accounted for, there are the desserts crafted for the truly indulgent. To end on a sweet note, go for the ‘Apple rings’ with vanilla ice-cream. I must add that consultant Chef Arun Chanda has surely done a great job! ALL IN ALL The experience at the cafe is a combination of its bold interiors and refreshing themes along with all the unique interactivity built in. The restaurant scores tops on its unique concept and is a joy to discover for jaded young crowd and is definitely value for money.
