LEMON POLENTA CAKE!
¾ cup /6oz /175 grammes/ fine polenta 7/8 cup / 7 oz/200g castor sugar 1 ½ teaspoon of baking powder ¼ cup /2 oz plain flour 2 medium sized eggs 2 egg whites only ½ cup /5tbsp / yogurt ½ cup /5tbsp/ vegetable oil Finely grated zest of 2 lemons Juice of 1 lemon Fresh fruits strawberries, raspberries, black berries Greek or soya yogurt
1. Pre-heat oven to 180C/gas 4 2. Sieve flour, polenta and baking powder into a bowl. 3. Put yogurt, oil, lemon juice and rind/zest into jug and stir together. 4. Break eggs into another bowl and mix together with the castor sugar till creamy. 5. Pour yogurt mixture into eggs and sugar and beat together. 6. Then slowly add and mix dry ingredients (flour, baking powder and polenta) into the eggs, yogurt, etc, until smooth. 7. Using a piece of kitchen roll and a little butter or oil, rub around a 1.2/2 litre baking tin. 8. Pour cake mixture into the tin and place in oven 9. Bake for 40-45 minutes or until you inset a skewer or pointed knife ino teh cake and it comes out clean 10. Take out of oven and leave to cool on oven top/ hobb, not on unit or in oven 11. When cool( after 30 minutes) take dinner knife and gently edge around the sides of the cake. 12. Using a tea cloth or oven glove gently tip cake upside down on plate 13. Serve with yogurt and fresh fruit...a light fresh summer treat
