Ingredients9 ounces dark chocolate,(higher quality chocolate will resultin better cake)1 cup butter¼ cup cocoa powder1 tablespoon almond extract1 ¼ cup sugar1 ½ cups ground, blanched,toasted almonds6 large eggs (room temperature)1/8 cup powdered sugar (for top)Serve with freshly whipped cream Recipe requires a spring form pan lined with parchment paper
Step 1- Prepare AlmondsToast blanched (skinsremoved) almonds on a foillined baking sheetfor 10 minutes at 350 degreesLet almonds coolGrind almonds finely in a foodprocessor with metal blade
Step 2 – Melt Chocolate & Mix IngredientsMelt chocolate and butter in adouble boilerUsing a standing mixer with whiskattachment, blend the meltedchocolate mixture together withthe cocoa powder, almondextract, and sugar until they arewell combinedAdd the ground almonds andwhisk until combinedAdd eggs, one at a time, beatingafter each addition
