Curry Ginger Lamb Chops with Apricot Lime Sauce

  1. 1. Curry Ginger Lamb &Apricot Lime Sauce!Savory, spicy and sweet! Your taste budswon’t know what hit ‘em…..and your guestswill be begging for more!!Prep time: 30 minutes(We’ve made it for 8 and for 80! Recipe canalso be used with other cuts of lamb – butthe French cut lamb chop is our favorite)

Ingredients (Serves 8) 16 Lamb Chops For the Rub: For the Sauce: 3 tablespoons curry powder 2/3 cup apricot preserves 2 tablespoons minced peeled ½ cup fresh lime juice fresh ginger 1/3 cup golden raisins 2 teaspoons olive oil 1/3 cup chopped fresh mint ½ teaspoon kosher salt ¼ cup balsamic vinegar ¼ teaspoon black pepper ¼ cup ketchup ¼ cup Worcestershire sauce 1 tablespoon hot sauce ¼ teaspoon kosher salt ¼ teaspoon black pepper
  3. 3. Step 1- Trim Chops and Prepare Sauce Sauce: Melt preserves in a saucepan over medium low heat Stir in remaining ingredients Remove from heat
  4. 4. Step 2 – Coat Lamb with Rub and GrillPrepare GrillCombine curry, ginger, oil, salt andpepper into a pasteRub paste evenly over lambPlace lamb on grill and cook 4minutesTurn lamb, brush with Apricot-Lime Sauce and cook 4 moreminutesTurn lamb again, brush with sauceand cook 2 more minutes
