  17. 17. Annual Report 2008 - 2009 Taj Agro International (Taj agro products) Mumbai., IndiaLarge amounts of energy are expended in the process of removing water and so plants developed over the years havebecome increasingly more energy efficient. Evaporators are much more energy efficient than driers, using only a fraction of akilogram of steam (or the energy equivalent) per kilogram of water removed. Driers on the other hand use severalkilograms of steam (or steam equivalent) per kilogram of water evaporated. Spray drying provides a means of rapidly andgently removing the bulk of the remaining water but, ideally, spray driers have short residence times.Milk powders are immensely more stable than fresh milk but protection from moisture, oxygen, light and heat is needed inorder to maintain their quality and shelf life. Milk Powders readily take up moisture from the air, leading to a rapid loss ofquality and caking or lumping. The fat in WMPs can react with oxygen in the air to give off-flavors, especially athigher storage temperatures (> 30 C) typical of the tropics.© 2008 All Rights reserved with Taj Agro (Taj agro products Mumbai)Taj Agro International, A Division of Taj Pharmaceuticals Limited – Taj Grouo of Companies

Cheese-makers impart different flavors andtextures into their cheeses by using different milks, adding various bacteria and molds, agingfor different lengths of time, and so forth.pdfthe pate, or inner portion, of a cheese is normally encased in a rind. natural rinds can becovered or mottled with mold, and theyre often edible, though many people find them bitterand salty. waxy rinds shouldnt be eaten.tips :1 always bring a table cheese to room temperature before serving it--the flavor is much better.2 younger cheeses tend to be mild, soft, and moist. As cheeses age, they become morepungent, hard, and crumbly.3 many cheeses become rubbery when cooked too long or at too high a temperature. If you4lan to cook with a cheese, select a heat-tolerant one like mozzarella or emmental.5 its usually best to keep cheese in its original packaging. If the cheese has been cut, wrap it6tightly in plastic wrap to hold in the moisture. If it hasnt been cut, wrap it first with waxed7paper and then with plastic wrap--this allows the cheese to breathe.8 store cheese near the bottom of the refrigerator, where temperature fluctuations areminimal.9 harder cheeses have a longer shelf life than soft, moist ones.10 dont freeze cheese--it ruins the flavor.© 2008 All Rights reserved with Taj Agro (Taj agro products Mumbai)Taj Agro International, A Division of Taj Pharmaceuticals Limited – Taj Grouo of Companies

This carbohydrate is a long chain linear molecule with a molecular weight ofapproximately 1 million. The long polymer chains attract and weakly capture water; as wellas physically tangle with one another in solution thus producing viscosity when mixed withwater. Guar beans are grown primarily in Pakistan and India. The beans are harvested anddried following the growing season. The beans are shelled from the pods, the germ and hullremoved. The resulting splits are wet-milled into powder, the powder is graded bygranulation and quality. Products are re-blended according to specification, bagged andmarked. What is Guar Gum?pdfGuar Gum is derived from endosperm of the guar plant (Cyamopsis tetragonoloba).
