CHAPTER II - REPORT SYNOPSIS
Polyols are chemical compounds that contain many functional hydroxyl [-OH] groups, which can react with
other molecules. Polyols may be classified as diols, triols, tetrols etc depending upon the number of
hydroxyl groups present. Diols contain two, triols three, and tetrols four hydroxyl groups.
Polyols may also be categorized into monomeric and polymeric Polyols. The former is the precursor for the
latter. Ethylene glycol, glycerine, and pentaerythritol are examples of monomeric Polyols.
Polyols may also be divided into naturally occurring Polyols and synthetic Polyols. Naturally occurring
Polyols, abbreviated as NOP, are exemplified by castor oil, soy oil, and sucrose. Many plants and animals
form natural sources of Polyols. Synthetic polymeric Polyols can be produced by using these NOP as
initiators. The starting point for polymeric Polyol is generally the hydroxyl group. But polyether Polyols are
synthesized by using amino group [-NH2] as the starting point. For the production of Polyols, extraction
from natural sources like vegetables and fruits is not a viable and economical proposition. Maize and wheat
are the chief sources for many Polyols in commercial production. Corn cobs, birch bark, and almond shells
yield xylose and upon industrial processing xylose produces xylitol. Similarly, isomalt is obtained from
sucrose.
Each hydroxyl group is linked to separate carbon atom in the aliphatic chain. Glycerol, glycol,
pentaerythritol are a few examples of Polyols. Polyols also include products such as 1,2,6-hexanetriol,
inositol, polyvinyl alcohol, sorbitol, trimethylolethane, and trimethylolpropane.

IV. PRODUCT/TECHNOLOGY RESEARCH
Polyols in food industry
Polyols are widely used in food industries as sugar substitutes. Since the term ‘Polyol’ cannot be
understood by general consumers, health care personnel and nutritionists suggest that the term ‘sugar
replacers’ be used for the sake of consumers. Polyols are scientifically called ‘sugar alcohols’ because of the
resemblance of chemical structure partly to sugar and partly to alcohols. But, this term is a misnomer
because Polyols are neither sugars nor alcohols. They are not digested into glucose or metabolized in the
body like sugar. Their consumption does not cause intoxication like alcohol. They only simulate sugars in
sweetness and are allied to alcohol in structure. They are mainly used as sugar substitutes on account of
their low calorie value when compared to sugar [sucrose]. Therefore, Polyols are in demand among health-
conscious people.
Erythritol, hydrogenated starch hydrolysates [HSH], isomalt, lactitol, maltitol, mannitol, sorbitol, and xylitol
are the eight kinds of Polyols presently available for applications mainly in food industry, pharmaceuticals,
health care products, and cosmetics.
With reference to the sugar alcohols, namely, maltitol, isomalt, erythritol, mannitol, sorbitol, and xylitol, a
few of the physical and chemical characteristics are highlighted below.
Maltitol and isomalt have the highest molecular weight of 344, while erythritol has only 122, the others
falling in the intermediate range.
Mannitol has a high melting point of 165º C, while xylitol has the lowest [94º C], and the others have
the melting points between these two values. All of these sugar alcohols exhibit high heat stability of
>160 and pH stability of 2-10.
Maltitol and sorbitol exhibit high solubility of 72 ww% at 25º C, while mannitol has the lowest value of
18 only.
Comparatively, sorbitol is highly hydroscopic. Maltitol, isomalt and xylitol have low hygroscopicity.
Erythritol and mannitol have very low moisture absorbing capacity.
