• 2 1/2 Cs cake flour • 1/2 C butter, softened• 1 tsp baking powder • 1 1/2 C sugar• 1 tsp salt • 2 eggs, at room• 2 tablespoons temperature unsweetened cocoa • 1 tsp vanilla extract powder • 1 C buttermilk, at room• 2 oz. red food coloring temperature (2-3 bottles depending • 1 tsp white vinegar on size) • 1 tsp baking soda
Instructions for Making the Red Velvet CupcakesStep 1Preheat oven to 350 degrees. Line two 12-cup muffin tins withcupcake papers.Step 2Mix together the cake flour, baking powder, and salt into a mediumbowl; set aside. In a small bowl, mix food coloring and cocoa powderto form a thin paste without lumps; set aside.Step 3In a large bowl, mix butter and sugar together until light andfluffy, about three minutes. Beat in eggs, one at a time, then beat invanilla and the red cocoa paste, scraping down the bowl with a spatulaas you go.
