Hansen, a leading biotech and food ingredient supplier, is using data integration as the basis for the sophisticated systems necessary to successfully run its global business. When customers in the food industry see opportunities for new foodstuffs, they rely on Chr. Hansen to help them develop the product to the correct specifications. The foodstuffs are typically yoghurts, cheeses and other foods based on fermented cultures and enzymes, or natural colours for food and beverages. For every culture project, Chr. Hansen works in the laboratory to try out different ways of producing a new culture. It then carries out small-scale 2-350-litre trials in a pilot plant and refines the process. Finally, it scales up the process for its production plants, which are based around the world. “The difficult challenge is having a local IT infrastructure but still having the need to compare across production sites,” says Erik Borgensgaard, international IT programme manager, who is leading Chr. Hansen’s project to introduce a new manufacturing execution system (MES).
