    1. Chia’s use as a food source dates back to 3500 B.C. The Mayans and other Native American peoples discovered Chia’s wondrous qualities. “Chia” is the Mayan word for strength. The Chumash Indians of California cultivated Chia. They prized it for its beneficial properties. This variety is often referred to as Chia sage or California Chia.
    2. The Aztecs First cultivated Chia over 500 years ago Recognized Chia as a \"superfood\" Prized it so highly that it was often used as currency “Chia” is derived from “chian,” meaning \"oily.“ According to mythology, Chia Came from the nose of the maize god Cinteotl.
    3. Aztec warriors and runners are believed to have sustained themselves for an entire day on just a tablespoon of Chia. After the Spanish conquest, Chia nearly disappeared . The Spaniards banned foods linked to Aztec religion or tradition . They virtually wiped out the Aztecs’ established and complex agricultural system to instead grow foods that were popular in Spain. Once Chiaan, the name of the Mexican state “Chiapas” translates loosely to \"river where the Chia sage grows.“
    4. CHIA (SALVIA HISPANICA L) Originated in the central valley of Mexico. Is a member of the mint family. Needs no grinding or refrigeration. Stores extremely well.
