Some Dishes of Dagestan Cuisine

Shashlik (kebabs) Shashlik is one of the most popular dishes with both men and women here in Dagestan. It is cooked from marinated mutton,tomatoes and onions.

The pieces of meat, onion and sometimes tomatoes are stringed on the spades and are fried on a special frying stove called mangal.

Served hot, may be served with wine or brandy.

Avar Khinkal
The dough is made with yogurt. Then rolled out to 5 m.m. thick and cut into pieces. Boiled to the readiness and served with boiled lamb meat and garlic sauce. Pierce with the fork when taking the khinkal from the boiling water.

Manty (Pies with meat prepared on the steam) Make a dough mixing flour, salt and water. Roll out thin and cut into pieces 10x10 cm. Put the meat filling inside. Cover with the left dough and prepare on the steam.

Serve with garlic sauce, or with melted butter with red pepper.

Chebureky
They may be called fried Caucasian pies.
Prepare the dough mixing water, flour and salt. Make thick sausages, cut them into pieces and make dough balls.

Leave for fifteen minutes and then roll the balls into thin circles. Put meat filling and fry in a frying pan with oil until they become gold.

Chudu The recipe is nearly the same as cooking chebureks with the only difference that you can use different fillings – minced meat with different flavorings, boiled pumpkin stuffing, cheese and curds, etc.

Roll the dough balls into circles,
Put the stuffing on the first circle, take another one and cover the circle with the stuffing. Press tightly the edges or cut them with the special dough wheel.

Kurze
The dough is made from water, salt and flour. Roll out thin and cut circles with the cup or glass. Prepare the filling – minced lamb meat with spices.

Make either of such shape as in the previous picture or like dumplings. Boil until all of them come up.

Serve hot with garlic sauce or sour cream with minced garlic.

Fried Eggplants Take some good size eggplants, cut them along and rub them with salt. Leave for half and hour, them wash in plenty of water. Fry on a frying pan in sunflower oil. Serve hot. Enjoy!

The recipe is the same, but cut the eggplants into round pieces not too thick. Fry in plenty of oil. Serve with tomatoes and sour cream or mayonnaise.
