Manufacturing Process
3 Baking
The agave´s baking is made in autoclaves for
approximately 18 hours, with a maximum
temperature of 90°C, all this with the finality of
hydrolyzing the sugars contained in the crude
agave (inukinas), by means of the heat´s
action and its own acidity, finally to become
fermentecible sugars.
4 Milling
Once that the agave is baked, it is milled in an
electric milling train, that is formed by 4 mills of 3
masses each one. This is made and to obtain the
juice from the agave. During this stage, the
amount of contained sugars is regulated to obtain
a better fermentation.

10 Bottling

TYPES OF TEQUILA
100% Blue Agave Tequila - Made with

Mexican Law governing TEQUILA
Under international agreement, Mexico is the sole producer of tequila.
Mexican government closely regulates the production of tequila from
growing the agave to bottling the liquor.
Tequila must be made from the blue species of the agave plant,
known as Agave Tequilana Weber
Any product to be called tequila must be produced within the
designated areas or towns in the states of: Jalisco, Nayarit,
Michoacán, Guanajuato, Tamaulipas.

When selecting a tequila their are two main
types that you can choose from. Tequila is either
considered 100 percent Blue Agave tequila or
Tequila Mixto which is a blend of 51 percent
Blue Agave Tequila and 49 percent other
sugars.
Tequila that is 100 percent Blue Agave will say
\"Tequila 100 % de agave\" or \"Tequila 100% puro
de agave\", whereas
Tequila Mixto will simply be labeled as \"Tequila\"
on the bottle.
