  1. 1. Pumpkin Cream Cheese. I Think Ill have to have this on hand at all times for fall: 8ozcream cheese, ½ cup canned pumpkin, 1 1/2 tsp pumpkin pie spice, 1 tsp vanilla, 2 Tbsbrown sugar, dash of saltApple Bread:3/4 c. oats,1 1/4 c. whole wheat and/or oat flour,6 oz. local honey,1/2 t. cinnamon,1/2 teaspoon ginger,1 cup Georgia pecans, 2 t. baking powder,1/2 t. baking soda,1/2 cup sunflower oil,1 1/2 cups cooked, Georgia grown apples (chopped, peeling left on, simmered until soft),1 T. vanilla,1/2 cup pure water,oats topping.Apple Pumpkin Bread:3 ½ cups white whole wheat flour2 teaspoon baking powder½ teaspoon baking soda1 teaspoon ground cinnamon½ teaspoon ground gingerpinch of allspice, nutmeg, and mace½ teaspoon salt1 15oz. can Pumpkin puree1 1/3 cup apple sauce4 eggs½ cup sugar (already reduced so reduce again on second try? Maybe 1/3 cupor ¼ cup?)½ cup honey½ cup Granny Smith apples, peeled and shredded 1. Preheat oven to 350°F. 2. Grease two loaf pans with vegetable oil or non-stick spray. 3. Mix both kinds of flour, baking powder, baking soda, spices and salt in the large bowl of an electric mixer. 4. Stir together pumpkin, eggs, sugar, applesauce, honey, oil or melted butter in a large bowl.
  2. 2. 5. Combine pumpkin mixture with dry ingredients, stirring only until combined. Stir in apple. 6. Pour half of the batter into each loaf pan and bake at 350°F for 50-55 minutes, or until a toothpick inserted in center comes out clean. 1 1/2 cup white whole wheat flour
1 1/2 teaspoon baking soda

1/4 cup corn oil

3 cooking apples -- shreddedPREPARATION: 1. In a large bowl, mix oats, flour, baking soda, cinnamon, and allspice. 2. In a small bowl, beat honey, milk, oil, and egg whites. Stir into flour mixture just until moistened. Fold in apples. 
 
 3. Spread in loaf pan coated with nonstick vegetable cooking spray. 4. Bake at 350F degrees for about 65 minutes. 
 
 5. Cool in pan on wire rack for 10 minutes and remove bread from pan.
