Awesome Tomato Salad with baked Salmon and caramelized onions: Laydown a bed of tomatoes. Chopped into large pieces with some flax seedoil drizzled over the top for nice nutty fragrance and the daily quota ofomega-3s. Then crumple some feta cheese over the top and sprinkle alittle oregano.Next chop up half an onion into thin long pieces. In a pan heat some oiland then caramelize the onions. Ground some fresh black pepper andsalt to taste. When the onions are half way done, then bake thepreviously marinated salmon over this bed of onions. Note: for thisparticular recipe, I had marinated the salmon with some Cajun spice.When the salmon is baked then lay it on top of the tomato salad and topoff with the caramelized onions. Very yummy and full of amazingnutritious benefits.
