  • 1. Gluten Free Pizza Breadsticks RecipeGetting kids to eat can sometimes be a problem, especially when they are on agluten free diet. But here is what I know – kids love to eat anything that can bedunked into something else and they will almost always eat pizza!This is a super easy, gluten free recipe for pizza breadsticks that can be used asan appetizer or main dish and can even be packed into a lunch box if the kiddoshave a way to reheat them briefly (i.e. a microwave).I made these with my family’s favorite pizza combo – pepperoni and cheese –but you could customize this recipe in a number of ways. For dairy free just addshredded dairy free cheese or you can omit it all together. You could leave outthe peperoni and substitute with some chopped sundried tomatoes and somebasil for a Margarita version.

This recipe could not be easier – I started with a box of Chebe’s BreadstickMix and simply added in some dried Italian seasoning, shredded mozzarellacheese and chopped peperoni and then for a pretty and extra cheesy finish, Ibrushed them with olive oil and some shredded parmesan.The dipping sauce takes about a minute and a half to make and BTW is a goodsauce when making regular pizza at home. I used dried garlic and herbs in thesauce because I think they give it an all-day simmered flavor without having toactually simmer all day. If you prefer to use fresh, be my guest!Of course, I don’t recommend serving pizza in any form every night for dinner,but the occasional pizza night is fun and gets those kids (even the picky ones)running to the table.

Gluten Free Pizza BreadsticksIngredientsBreadsticks1 – 7.5 ounce box Chebe Garlic-Onion Breadstick Mix2 tablespoons plus 1 teaspoon olive oil – use divided1 cup shredded mozzarella cheese (or dairy free cheese)3 ounces pepperoni, diced into ¼ inch pieces1 teaspoon dry Italian seasoning2 large eggs¼ cup water¼ cup grated or shredded parmesan cheese (omit for dairy free)
  • 5. Sauce1 – 6 ounce can tomato paste6 ounces water1 tablespoon olive oil2 teaspoons dry Italian seasoning½ teaspoon garlic powder1 teaspoon kosher or fine sea salt½ teaspoon black pepperPinch crushed red pepper flakesPinch sugar or just a dash of agave, honey or sweetener of your choice

  • 7. DirectionsBreadsticksPreheat oven to 375 degrees. Line a baking sheet with parchment or asilicon baking mat.Combine the breadstick mix, 2 tablespoons olive oil, shredded cheese,diced pepperoni, 1 teaspoon Italian seasoning, eggs and water in a mixingbowl. Stir with a fork to combine – it will not get smooth until you kneadit. Dump the contents of the bowl onto a clean work surface and kneaduntil the dough comes together and is smooth. Divide the dough into 12equal pieces and roll into logs about 4 ½ inches long. If the pepperonisticks out too much, just push them back into the dough. Place thebreadsticks on the prepared baking sheet, brush with olive oil and sprinklethe parmesan on top. Bake for 25 minutes or until golden brown. Servewarm with the sauce for dipping.
  • 8. SauceCombine all the ingredients in a small saucepan. Whisk to combine and heatuntil warm. Let sit while the breadsticks are baking.
