We have done some interview and research on three pastry shops. One of them is located in Jalan Burma, Penang, which is called Ming Xiang Tai Pastry Shop. The other two businesses are Mr Siew Bao and Cookie Box in Klang Valley. All the three businesses are pastry companies. Each of them have their own unique and main products. Ming Xiang Tai is famous of their Trishaw Egg Tart, as for Mr Siew Bao it is the siew bao (roasted bun) and Cookie Box is their western cookies. RESEARCH QUESTIONS: 1. What are your main products ? METHODOLOGY: After doing our discussion, we decided to choose the pastry shop business as our research area. We chose the two traditional pastry shops and one modern pastry shop as our research. Before going to the places, we did search a lot of information and details of all these three pastry shops through the internet. We also did get the approvals from all the pastry shops by making calls and confirm the dates and time with them. We also did arranged the interview questions before we went there. For the Ming Xiang Tai pastry shop, we went there twice and we went there by taxi. On the first day, we visited the place and confirmed that whether it is the right place to do our research on. We captured pictures outside the shop. On the second day, we came early and tasted the pastries at the shop before we interviewed the manager. This time, we took quite a lot of pictures inside the shop. During the time of the interview, we asked all the questions that we made ourselves. We immediately noted down all the answers that she gave us, so that we won’t lose any important points or details. Besides that, we also read through their books which have all the deep information and history about the shop. Afterwards, we took picture with the manager and left the shop. The second research that we have done was the Mr Siew Bao, which located at Sunway Pyramid, Klang Valley. The method that we used to interview this traditional pastry shop is quite similar to the first pastry shop that we had done. The only method that is different was we just directly go there to do the interview instead of visiting the place first. It was because this place is very near to our places that we

The last shop that we interviewed is a modern pastry shop, the Cookie Box. It is located in Empire Shopping Gallery, Subang. Although the method we had use to do research and interview on this pastry shop is quite similar with the first two pastry shops, however we had an interview with the founder and also the owner of Cookie Box while we had only did some interview with the supervisors of Ming Xiang Tai and Mr. Siew Bao. Thus, we had received more information about the Cookie Box as compared to Ming Xiang Tai and Mr. Siew Bao. CONCLUSION: In conclusion, we had successfully completed the interview with the three pastry shops. Through the questions that we had prepared, it would be enough information for us to know that how each businesses survive from being eliminated by its competitors that are selling the same product. We are able to know the surviving technique of each shop by using the information that is provided by the shop owners. We did not only rely on our interviews to do our research, we did also used the information from the books and internet as well.
    • 7 FNBE JAN 2013 - ENGL 0205 English 2 Rena Sim Lee Na & Wong Li Hui Amy The Research Essay Brief Introduction about pastry (Traditional and western) Pastry is defined as dough or paste consisting primarily consisting of flour, water, and shortening that is baked and often used as a crust for foods such as pies and tarts.(The American Heritage, 2009) Pastry was originally used by those living in the Mediterranean regions of Europe during the ancient times. However, pastry started to begin very popular in the Western parts of Europe including Britain when it was until the crusaders began to return home from the wars. All the recipes that these countries and people were using were adopted by the societies throughout the western hemisphere. At the present day, there are recipes which if looked at attentively could surely be traced back to these pretty much ancient civilizations. In Chinese, pastries were established to serve food, ritual and festive needs. Pastries are used in corporate functions for guest and expatriate staff to sample traditional Chinese pastries (Chinatownology, 2007). Any festival or social event will relate a degree of religious ritual and pastries evolve both ritual and social functions at the same event. The consumption and exchange of pastries creates opportunities for individuals, families and even companies to increase and strengthen relationships and to celebrate special events such as wedding ceremonies, birth of a new child, birthday or Chinese New Year. Hence, after soe discussion, we decided to choose the pastry business as our research area. We had chosen two traditional pastry shops and one modern

Before going for the interview, we had searched a lot of information and details about these three pastry shops through the internet and online newspaper. We had also get the approvals of all the pastry shops by making calls and confirm the dates and time with them. Last but not least, we had make and arranged some interview questions before we went there. Ming Xiang Tai Ming Xiang Tai is a traditional pastry shop which is located at the ground floor of SunTech Building at Bayan Baru. We went there twice by taxi. On the first day, we just visited to the place and confirmed whether the place is which a right place that we want to make research. We captured pictures outside the shop. On the second day, we came early and tasted the pastries at the shop before we interviewed the manager. According to the interview, approximately 30 employees including staffs and chefs is working at this shop. Au Meng Kit is the key founder of this pastry shop. He developed his pastry-making skills as a boy helping out his parents (Christina Chin, 2012, para 21). The main product of this pastry shop is the Trishaw Egg Tart. They have been selling this product for more than 30 years. In the early years, they started selling on the trishaw. That’s how the egg tart got it’s name. Beside just selling products at the shop, it also provide extra services such as order and delivery service and post sales service for some special occasions such as baby full moon and chinese traditional wedding. A lot of customers love to buy the products at this shop. There is about 300 customers per day in this shop. Those customers are included tourists, local customers and regular customers. Sandy Lau (personal communication, April 20, 2013) said that the motive of Mr Au want to start the business is to succeed the baking skills and the business from his ancestors and

By 1979, he started using trishaw to sell the delicacies in trays. That’s the reason why the trishaw is chosen as part of their logo. Sandy Lau (personal communication, April 20, 2013), the supervisor of Ming Xiang Tai Pastry Shop said that they have 3 competitors in the area of Jalan Burma, Penang. The top 3 competitors are these well-known traditional pastry shops called Ghee Hiang, Him Heang and Ban Heang. Ghee Hiang was established in 1856, it is the Penang’s oldest tau sar pneah maker (Christina Chin, 2010, para 19). It was founded by a Fujian pastry baker who decided to settle down in Malaya (Alan Teh Leam Seng, 2011, para 11). Their main product is tau sar pneah also known as bean paste biscuit and another popular product is the Ghee Hiang Baby Brand Pure Sesame Oil (Ghee Hiang Manufacturing Co. Sdn. Bhd, 2009). They have a total of five branches in Penang. One of the retail store of Ghee Hiang is located at Macalister Road, Penang. Another competitor for Ming Xiang Tai is Him Heang pastry shop. Him Heang was established in 1948, they had introduced the Tambun biscuit (Christina Chin, 2010, para 12). The founder of Him Heang is Seow Oh Thor (Christina Chin, 2010, para 14). Tambun biscuit is their main product. Him Heang is located at Burma Road, Penang. As it does not have any agents or outlets elsewhere other than its flagship store and bakery, Him Heang popularity rises quickly (Christina Chin, 2010, para 13). Moreover, Ban Heang is also the competitors for Ming Xiang Tai. In the year 1997, Ban Heang was established (“About Ban Heang”, 2011). Leow Tit Ban is the founder of Ban Heang (David Tan, 2012, para 2). Their main products are hand-

Ban Heang is located at Macalister Road, Penang (Ban Heang (M) Sdn. Bhd., n.d). Ming Xiang Tai Pastry Shop is facing moderate competition from the other competitors said Sandy Lau (personal communication, April 20, 2013). The strategy they use to compete with their competitors are by producing good quality pastries. The founder, Au Meng Kit said that in Penang, branding and marketing mean little as Penangites have very high expectations on value and quality (Christina Chin, 2012). So, they only did some interview with newspaper and magazines, such as The Star and Feng Chai magazine (Sandy Lau, personal communication April 20, 2013). Sandy Lau (personal communication, April 20, 2013) also stated that every time they open one more new branch, then there will be more new products being launched. On the other hand, Ming Xiang Tai’s pricing decisions are not affected by their competitors and in fact, they are more expensive than others because they use very high quality ingredients (Sandy Lau, personal communication April 20, 2013). Moreover, there are around 12 types of the best baked pastries sold in Ming Xiang Tai and it is a niche market with the tagline of “the secret of irresistible pastry” (Christina Chin, 2012). Whereas, the competitors of Ming Xiang Tai sell their products at lower price (Sandy Lau, personal communication, April 20, 2013). Recently, Ming Xiang Tai expanded their wing to cater for the rising demand, serving the pastry lovers in other place which is located next to Subway at SunTech Tower (Shirly T, 2012, para 29). This time, we took quite a lot of pictures inside the shop. During the time of interview, we asked all the questions that we had made ourselves. We immediately noted down all the answers that she gave so that we won’t lost any important points or details. Besides, we read through their books

Afterwards, we took picture with the manager and left the shop. Mr Siew Bao The second shop that we visited is Mr Siew Bao pastry shop. Mr Siew Bao is also a traditional pastry shop. Mr. Siew Bao is a famous brand from Seremban, Malaysia. Everyone can easily recognised their signature pastry, the Siew Bao by just looking at their company’s name. Siew Bao is a type of crispy and round Chinese puff. Besides, it also offers all sorts of local puffs and buns, from Cheese Chicken Siew Bao to Curry Siew Bao and Mushroom Vegetarian Siew Bao, to name but a handful of their ample selection (Monhan Holdings Sdn. Bhd., 2013). However, their 3 main types of irresistible pastry which are the best seller among their customers are “siew bao”, Portuguese egg tart and egg tart (personal communication, April 27, 2013). The famous "Siew Bao" brand in Seremban, Seremban Kee Mei Siew Pow has its beginning way back 30 years ago in the small town of Seremban and was founded since 1980. The Seremban “siew bao” was invented by the founding family members, has a crunchy texture with layers and layers of fine, delicious flakes filled with the best quality ingredients, releasing an irresistible aroma when baked. Now, it offers a wide variety of all-time favourite Chinese pastries other than “siew bao”. Mr. Siew Bao had only just started four years ago in 2009, even though their headquarter in Seremban was established 3 decades ago (personal communication, April 27, 2013). The key founder of Mr. Siew Bao was Wong Tian Poh who had started this business in order to expand their company to overseas (personal communication, April 27, 2013). Besides that, through the interview with their supervisor, Ms Joe, we were told that the chef is being chosen as
    • 12 FNBE JAN 2013 - ENGL 0205 English 2 Rena Sim Lee Na & Wong Li Hui Amy the logo for Mr. Siew Bao because they are in a food and beverage industry and thus, they just want to be straight forward and let the customers know that they are selling food (personal communication, April 27,2013). According to the supervisor, Ms Joe (personal communication, April 27, 2013), a lot of resources and capital is needed to run this business. Therefore, each outlet of Mr. Siew Bao had spent around RM 200, 000 to start this business. In addition, Ms Joe (personal communication, April 27,2013) said that as the product that they sell is all Halal, so every races can buy their pastry. Based on their survey, their customers are mainly adults and teenagers. There is around 500 to 600 customers per day in this shop. Beside the regular customers, a lot of tourists from different countries love to buy their products too. There are only 2 or 3 employees in each outlet. Results of the warm welcome from their devoted fans, Mr Siew Bao has successfully opened up all over the Klang Valley to serve their customers better. They have 6 branches in Selangor and Kuala Lumpur now. All their outlets can be found at Sunway Pyramid, Empire Shopping Gallery, Plaza Mont Kiara, Lot 10, Southgate Chan Sow Lin and Sri Petaling. In their most recent development, they are opening another two new branch at Midvalley Megamall and KLIA Airport. Ms Joe (personal communication, April 27, 2013), the supervisor of Mr. Siew Bao said that they have 2 competitors in the area of Petaling Jaya. Tong Kee Brothers Confectionery is one of their competitors. Tong Kee Brother Confectionery was founded by the Hoong’s family during the 1960s and was well established since 1970. The Tong Kee tradition has been passed down from generation and generation, from the late Hoong Wua to his siblings. Toong Kee Brothers Confectionery now already have a number of branches within Klang Valley and the

Other than that, Mon Kee pastry shop is also Mr. Siew Bao’s competitor (personal communication, April 27, 2013). It was founded by Fong Mon Kee. Its bestselling products are the famous Egg Tart, Curry Puff and Siew bao. Recently, this pastry shop already have 27 outlets within the area of Selangor. To compete with their competitors, they used some strategies. They make advertisements and seasonal redemption card. Besides, they designed and decorated the packaging in order to attract their customers especially the tourists as souvenirs. They also make the happy hour discount of 30% from 9pm to 10pm daily. Cookie Box The last shop that we interviewed is a modern pastry shop, the Cookie Box. Cookie Box is a modern pastry shop which is located at lower ground floor, Empire Shopping Gallery, Subang. There are only 2 employees in the shop. The toast box is being chosen as their logo. It is because it looks cute, simple and easily recognize. Designed cakes and decorated cookies are their main products. The sale services such as order via mail, online and call, delivery is provided. The delivery service is chargeable. Based on interview, approximately 100-200 customers walk in the shop every day. During weekend, their customers can reach to approximately 300-400. Chin Siew Ching, also named as Sue, is the key founder of this pastry shop. She has been started this business for 5 years. Sue started the business herself at home. At that time, she did everything herself. She bought the ingredients, baked the cakes and cookies and delivered it all by herself. Then, with her 3 sisters, they started the

In the year of 2009, they finally open their first shop at Empire Shopping Gallery, Subang. Sue Chin (personal communication, April 30,2013) said that she run this business with her sisters only for having fun. All the sisters had nothing to do on weekend and started this business during weekend. Due to unique of their products, they got an offer of a shop lot by Empire Shopping Gallery in a sudden. Recently, they have four branches now. She is now focusing on the central kitchen and hope to become a factory. Besides, Sue Chin (personal communication, April 30, 2013) said that she is planning to go nationwide by emphasizing their products and pay attention on delivery and shipping service to customers. They are not going to open more outlets to so that their product quality is maintained. According to the interview with the owner, Sue Chin (personal communication, April 30, 2013), Cookie Box have around 3 to 4 number of competitors in the Empire Shopping Gallery. Secret Recipe is one of their competitors. In 1997, Datuk Steven Sim and his nephews started their first Secret Recipe outlet in SS2, Petaling Jaya (Rachael Kam, 2009, para 6). Thus, the founder of Secret Recipe is Datuk Steven Sim (Racheal Kam, 2009, para 2). Their main products are 40 different varieties of cake (Karina Foo, 2012, para 5). It has 300 outlets in Malaysia, South-East Asia, China and Australia (Karina Foo, 2012, para 11). While, the nearest outlet of Secret Recipe to Cookie Box located in Empire Shopping Gallery is in Subang Parade. In addition, The Loaf Bakery is also the competitor for Cookie Box. The Loaf Bakery was established in July 2006 by M and M Consolidated in Langkawi (The Loaf is offering healthy and refined food, 2008, para 7). Tun Dr Mahathir Mohamad is the founder of The Loaf, a Japanese inspired bakery which has become popular

The main product of The Loaf bakery are healthy refined Japanese style breads and also, savories and pastries (The Loaf is offering healthy and refined food, 2008, para 2). It has 12 outlets in Malaysia ( “Our stores”, n.d.). And Cookie Box is competing with the one which is located also in Empire Shopping Gallery Subang. Cookie Box is also competing with Famous Amos. Famous Amos was founded in 1975 as the Famous Amos Cookies Company, however in 1984, the first Hot-baked store was only opened in Malaysia (The Famous Amos Chocolate Chip Cookie Corp. (M) Sdn Bhd, 2009). The founder of Famous Amos is Wally Amos (The Famous Amos Chocolate Chip Cookie Corp. (M) Sdn Bhd, 2009). Their main product is “Famous Amos” Chocolate Chip Cookies (The Famous Amos Chocolate Chip Cookie Corp. (M) Sdn Bhd, 2009). Famous Amos already have 60 successful Hot- baked stores in shopping malls and airports in Malaysia (The Famous Amos Chocolate Chip Cookie Corp. (M) Sdn Bhd, 2009). It also have a store in Empire Shopping Gallery which has become the competitors of Cookie Box. Sue Chin (personal communication, April 30, 2013) said that Cookie Box is constantly facing strong competition from its competitors. Sue Chin later added that, but they have so many new projects collaborating with other companies like Disney so, they are not very afraid of their competitors. The strategy for the first two years are about operation, maintain quality of products and staffs (Sue Chin, personal communication, April 30, 2013). Cookie Box also make some advertisement and interview with newspaper and magazines, for example, with Personal Money magazine and Time Out Travel magazines (Sue Chin, personal communication, April

In addition, they always come out with new products, making new recipes, new packaging and be different to compete with competitors (Sue Chin, personal communication, April 30, 2013). Cookie Box will also launch new products every 3 months, and the founder will reinvent all the cupcakes flavours and designs (Sue Chin, personal communication, April 30, 2013). They have a variety of designed cakes, decorated cookies and decorated cupcakes to attract their customers. Sue Chin stated that another strategy is by keeping her cakes small and affordable to meet the demand from low- and middle-income earners (Lim Siew May, 2012). Last but not least, Cookie box is a Niche market because after opening for four years they still haven't see any shops like theirs that sell decorated cookies and cakes in an affordable and reasonable price said Sue Chin (personal communication, April 30, 2013). While, the competitors of Cookie Box have an advantage as they are larger in scale compared to Cookie Box (Sue Chin, personal communication, April 30, 2013). Comparison and Contrast These 3 businesses have their own similarities and differences. About these three pastry shop’s similarities, they have the same type customers, which are regular customers, local customers and also tourists from other countries. Besides, to compete with their competitors, these 3 pastry shop will use the similar strategies. One of the strategies is making their own advertisements through newspaper and magazines. Launching new products in certain periods of time are one of their strategies too. There are quite a lot of differences among these 3 pastry shops. The numbers of employee in each pastry shop is one of the differences. Ming Xiang Tai has 30

Besides, all their main products are not the same too. For Ming Xiang Tai, their main product is the Trishaw Egg Tart. “Siew Bao”, Portuguese egg tart and egg tart are the best selling products for Mr. Siew Bao whereas the main products for The Cookie Box are designed cakes and decorated cookies. Other than that, these 3 pastry shops have different numbers of customer. In Ming Xiang Tai, average 300 customers walk in their shop daily. For Mr. Siew Bao, their customers can reach to approximately 500- 600 per day. The Cookie Box has the least number of customers among these pastry shops, which is only 100-200 per day. In addition, they have different numbers of branch recently. Mr Siew Bao has the most numbers of braches so far, which is 6 branch within Petaling Jaya, whereas The Cookie Box has less branches compare to Mr Siew Bao which is only 4 branches and Ming Xiang Tai has the least numbers of branch recently, which is only 2. Last but not least, they are also have different strategies to compete with their own competitors in order to attract more customers. The supervisor of Ming Xiang Tai,Sandy Lau (personal communication, April 20, 2013) said that every time they open one more new branch, then there will be more new products being launched. Ming Xiang Tai’s pricing decisions are not affected by their competitors and in fact, they are more expensive than others because they use very high quality ingredients (Sandy Lau, personal communication April 20, 2013). On the contrary, Mr Siew Bao make redemption card, designed and decorated the packaging to attract their customers especially the tourists as souvenirs. They also make the happy hour of discount of 30% every day one hour before their shop is closed. For

Furthermore, they are not going to open more outlets to so that their product quality is maintained. Conclusion From the similarities and differences of these pastry businesses that have been stated above, we can conclude that all the business strategy are equally good where they have their own advantages and disadvantages. Apparently, risks are taken and these businesses also show good example of running a business in the food industry that does not only focus on gaining profit, and yet, emphasize on the most important thing which is maintaining the quality and thus, success will come along with it.

Cookie Box is managed by the three sisters as in partnership.Marketing and postings stuffs online are done by youngest sister, Kim.
