Gluten Free Coconut Blueberry Pancakes by The Wholesome Foodie
(paleo, gluten free, vegetarian)
Serves 4
4 whole eggs
1 cup canned coconut milk(not coconut beverage)
2 tablespoons pure maple syrup or raw honey
2 teaspoons pure vanilla extract
1/2 cup coconut flour
1 teaspoon baking soda
3/4 cup blueberries(or 1/2 cup chocolate chips)
ghee or coconut oil for greasing the skillet
pure maple syrup to serve with

My husband and I have been hard at work creating and writing new recipes. We’re having a great time eating too (while losing weight and f eeling awesome!) T here’s something so comf orting about warm, f luf f y pancakes on a cold winter morning. Why not make them healthy?! T hese gluten f ree coconut pancakes are packed with nutrients and lots of protein! I invite you to try out this recipe. It’s so easy, delicious and will leave you and your f amily satisf ied. Gluten Free Coconut Blueberry Pancakes by The Wholesome Foodie (paleo, gluten f ree, vegetarian) Serves 4 4 whole eggs 1 cup canned coconut milk(not coconut beverage) 2 tablespoons pure maple syrup or raw honey 2 teaspoons pure vanilla extract 1/2 cup coconut f lour 1 teaspoon baking soda 3/4 cup blueberries(or 1/2 cup chocolate chips) ghee or coconut oil f or greasing the skillet pure maple syrup to serve with 1. Mix together the milk, eggs, honey and vanilla in a medium-large mixing bowl. 2. Mix together the coconut f lour, baking soda and salt and then add to the milk and egg mixture. 3. Fold in blueberries with a spatula
  2. 2. 4. Pour the batter onto a well greased skillet set on medium heat. Form into pancake shapes (the thinner the better) 5. Once the pancakes bubble on the top(about 5-7 minutes, f lip over and cook other side until golden brown. 6. Serve with pure maple syrup and more blueberries. If you’re f eeling the need f or some extra winter comf ort, go ahead and add some dark chocolate bits, 80% or higher is pref erred. Enjoy!
